Paul's Pumpkin Bars

I have been making this recipe for over 10 years. The only difference between this one and mine is my recipe uses 2 cups of sugar and I add 1/4 tsp ground cloves and and 1/2 tsp of fresh ground nutmeg along with the cinnamon. Last but not least I always double the cream cheese frosting... c'mon who doesn't love their pumpkin bar slathered in good cream cheese frosting?!? I also use good Mexican vanilla in my frosting... This is what heaven would taste like in the fall...

Here is my Momo tip of the day that got rave reviews from my guest. prepare as instructed but instead of steaming get a nice large non stick skillet on medium heat with a couple Tbls of light oil like EVOO. Place the dumplings in the hot skillet large side down and cook without turning 5 minutes until brown. get a nice tight fitting lid then drizzle a couple of TBLS of water into skillet and slap the lid on let cook for another 5 min or so... Oh Man! Make a nice spicy-sweet dipping sauce and you are rockin! serve em hot! Good luck keeping up with the demand!

Great recipe, only changes are I went easy on the ginger, used about a 1/4 cup real rum instead of extract and I used sponge cake with a little mango jelly spread on it before cubing it up... next time I may fold some whipped cream into the cream cheese mixture...

Pork Brine

Awesome brine, I brined a whole Pork loin for two hours. I rinsed it good dried it off rubbed with olive oil and rolled in kosher salt, garlic, thyme and rosemary. I roasted it on my kamado grill at 300 degrees until the inside temp hit 160. rested for twenty minutes and sliced... Oh Baby! very good brine

Excellent, my 10 year old son made this with my assistance. Very moist, and super banana infused! If you like bananas you will love this. Use very ripe bananas. Ones with the skins turning brown are the best. The riper the better

Three Cheese Manicotti II

Good recipe, I use a nice meaty marinara over the Manicotti if you use a large pastry bag with no tip you stuff the shells pretty fast without tearing.

Chantal's New York Cheesecake

This is a nice simple Cheesecake. I added canned cherries to the top when serving. It was great for our family get together. Contrary to what one reviewer said about cheesecakes they are NOT supposed to crack and all cheesescakes should be cooked in a water bath. She should know this as a professional baker.

Absolutely Excellent Oatmeal Cookies

This cookie recipe was too cake like. It didn't have that chewey oatmeal cookie texture. I think an addition of another cup of oatmeal might help. I won't make it anymore.
