Easy Pizza Sauce II

I used tomato paste and added just enough hot water to make it a liquid, and added twice the seasonings like a previous rater suggested. It was a little intense and I will try it with just canned sauce next time. I used it two days in a row. It made my kitchen smell just like a good pizza parlor! Smell was perfect.

Quick and Easy Pizza Crust

I let mine rise up both times I made it. What I love about this is that it is no-knead so it really is very easy. Just let the yeast sit in the water than throw in the other ingredients and stir. Its good to know that if you don't have time you can use it right away instead of letting it rise. Put enough oil in the pan, sprinkle with corn meal and let it rise twice and it tastes just like pizza hut crust.

Playgroup Granola Bars

I made a lot of changes to these bars to make them vegan and cheap enough to serve to hundreds of people. It is much cheaper this way and still very tastey! My recipe is as follows: mix combine dry ingredients separately: 2 c. quick cook oats, 1 cup spoon-measured flour, 2 T corn starch, 1-2 t cinnamon, 1/3-2/3 c. brown sugar. Mix well. Mix wet ingredients next: 1 c. water, 1 c. oil, 1-2 heaping T peanut butter. whisk together, heat to melt to mix if necessary. Stir together with dry ingredients. Add in raisins or other goodies. Spread into 9 x 13 pan. Bake for 20 minutes. Cut into bars.

Flavorful Beef Stir-Fry

FANTASTIC! And easy! I added yellow and red peppers on super sale from grocer (2 for $0.98), minced garlic and ginger, 1 T fish sauce, some sake, and mirin, used white wine. I love this sauce. I did not double the sauce and added more veggies. I love the corn starch in it to help the sauce stick. Toddler loved it too. REALLY GOOD RECIPE!

Zucchini Alfredo

This is good. I sauteed the garlic and added 1 pack frozen spinach and chicken. Used soy milk, fat free cream cheese and sprinkled with shredded parm. Was good! And EASY and fast so +++

Banana Pudding II

This is really good. I didn't use a double boiler. I just used a normal pot with a thick, even heat distribution bottom and whisked continuously until thickened (5-10 minutes). I did not use butter or vanilla (forgot) and it was still really wonderful. I only used 2 bananas. Loved it warm with the vanilla wafer cookies. Will definitely make again. Super easy.

Lemon-Lime Soda Gelatin Salad

I used sugar free strawberry jello and chopped 2 peaches and a handful of strawberries. I added the standard 8 oz pack of cream cheese and 1 cup boiling water and stirred it all together. Then I added 8 oz of cream soda. We'll wait for it to set up and see what happens!

Easy Taco Casserole

This is good. I sauteed one onion in a little oil, then browned lean diet beef in the onion, drained oil, added 1 taco seasoning packet and water. Then I added the mayo tasted it and added chile powder and adobo to taste. I added layers of refried beans and of a mixture of 1/2 pack cream cheese and 1/2 cup sour cream. I used only 1 cup of grated cheese. I did not put the lettuce and tomatoes in the casserole, but put them on the side so that I could reheat it easily. I also served it with the "Asparagus Guacamole" recipe from this website. Great easy meal!

Asparagus Guacamole

This is great! I will definitely make this again. I used 12 oz. frozen asparagus, no green onions, and a generous amount of Adobo (salt/white pepper/oregano seasoning). but I think I will be a little more conservative with the garlic next time. Maybe press only 1 clove, then taste and add another if needed. Its really a very good substitute for guacamole. Ole! Yume!

Vegetarian Stuffed Peppers

Wow, this is great. I didn't miss the meat at all. I used walnuts instead of pecans, white japanese rice instead of brown, and shredded parm instead of grated. I cooked the diced tofu in the sauce, but also cooked the cranberries, and nuts in the sauce. I added green onions and diced tomatoes to the stuffing mix as it cooked in the sauce. Afterward, I stirred in white rice and shredded parmesean. Instead of using tomato sauce, I pureed more of the diced tomatoes in a food processor and spooned them on top. I sprinkled w/ shredded parmesean on top before baking. I found there was no need to wait for the stuffing mix to cool before loading up the microwaved peppers. They were great and easy! I served them with sesame green beans and peanut butter noodles. Everyone loved it! No one missed meat.

Peanut Butter Noodles

Awesome! I love it. Its like Pad Thai only easy! I used 2 teaspoons of chili paste and it was perfect! I may add lime and bean sprouts next time. I might mix in the green onions and chopped peanuts to make sure they don't all fall to the bottom. But the recipe is excellent as is. LOVE IT!

Rosemary Ranch Chicken Kabobs

I really like this. I marinated it for much longer than required (a few hours). It may even benefit more from an overnight marinade. I made it in an electric grill bottom skillet. It was maybe too oily and I will try using less oil next time. Also, I used 1/2 recommended amount rosemary because substituted dry rosemary for fresh. I think I will use a whole Tablespoon next time and grind or crush it better first. Its a very tastey sauce. I agree that it is a good sauce on rice.

Seven Layer Taco Dip

This is really good. I added a layer of ground beef with taco seasoning and a layer of "guacamole" dip from the dairy case at the store. It would be better with real guacamole, but it was still really good. I put the cheese, green onions and black olives on top to garnish. I will make this one again!

Wheat Germ Whole-Wheat Buttermilk Pancakes

The first time I made these, I used a thick unsweetened plain yogurt instead of milk, and white flour instead of wheat pastry flour. I added 1 teaspoon baking powder. They turned out very thick and indulgent! I ate them with bananas and walnuts, a little maple syrup and dollups of spray whipped cream. They were great! However, the second time I made these, I used 1 c. runny sweetened yogurt and 1. cup milk, and whole wheat pastry flour. I added 1 teaspoon baking powder. The pancakes turned out very runny and flat, almost like crepes. They were soggy and didn't crisp on the top and bottom. If I make these again, I'll either go back to thick yogurt and try the wheat flour to see, or I will reduce the milk/dairy in half and maybe use yogurt. We'll have to keep tweaking this, because they do not rise or work well as written. (and yes, my baking powder and soda were new and fresh).

Awesome Sausage, Apple and Cranberry Stuffing

Awesome recipe! I only had dry herbs and no dried cranberries and it still turned out great. I used chicken hearts and gizzards (1/2 pound) and I baked the stuffing at 350 for 1 hour. It was perfect not too soggy just as written! I had never made stuffing before but it was great!

Apple Strudel Muffins
