Supreme Scalloped Potatoes

wow! Was this good! I didn't take the time to shred the potatoes, just left them in chunks. I also used red potatoes & left the skin on, as well as sneaking in a few yams. Definitely the best scalloped potato recipe!

Ham and Bean Soup II

Yum! Nothing like coming home to a crockpot full of this wonderful soup! I used a bag of mixed beans and added some brown sugar like other reviewers. Otherwise followed the recipe as is. Thank you.

Morning Glory Muffins I

If I could give this a 10 star rating, I would! I just used what I had on hand and as one reviewer said, it's a very forgiving recipe. I did 1 cup each whole wheat &white flour, 2 whole eggs, applesauce instead of apple butter (though I'd like to try that), and 3/4 cup white sugar &1/2 cup brown) I only got 12 muffins, but I tend to make mine large (baked for 25 minutes). Thank you for a delicious recipe!

Pumpkin Zucchini Bread

Wonderful recipe! Just made a few changes for personal taste: 1 c. white sugar, 1 c. brown; 1/2 c. canola oil, 1/2 cup applesauce instead of butter; 1-1/2 c. each all-purpose & whole wheat flour. I did add more zucchini because it needed using up. Instead of 2 loaves, I made one & a batch of muffins, adding raisins to the bread & chocolate chips to the muffins for the kids. Excellent!

Homemade Pizza Sauce

so good! Thank you! I used tomatoes from my garden that I had cooked down and this was a great way to use them! I used it for piizza one night and then as pasta sauce with shrimp - delish!

Zucchini Yogurt Multigrain Muffins

Oh yum! I just had one fresh out the oven! Made just a few minor changes - didn't have oat flour, so ground some oatmeal in the food processor. I like dark brown sugar, so I did 1/2 white, 1/2 dark brown. Will definitely make again! Always looking for different ways to use up zucchini & get veggies in the kids!

Yum! What a great way to get veggies into my kids! Just tweaked it a little to try & make it a bit more healthy: 1-1/2c. whole wheat flour, 1-1/2 c. white, applesauce instead of oil. Also 1c. white, 1 c. brown sugar, 1/2 c. cocoa powder, & doubled the spices. Delish! Thank you!

Yummy Chocolate Chip Oatmeal Cookies

Anytime there's confectioner's sugar in a cookie - yum! 2 cups of butter - yum! I just snuck in a little flaxseed, otherwise followed the recipe. Excellent! Made a 2nd time & did 1/2 whole wheat & 1/2 regular flour - still awesome!

Chocolate Zucchini Cake III

Made this twice - very moist! Used a bundt pan & baked for 1 hour 10 min. Used 1 c. whole wheat/1c. white flour; 1 c. brown sugar/ 1 c. white; substituted applesauce for oil. Delicious! Didn't bother to ice, but I'm sure this would be great!

Banana Muffins with a Crunch

These are definitely the best banana muffins I've made! Very moist! I used 1 1/2 cups each of white and whole wheat flour, and did 1/2 c. brown sugar & 1/4 cup white. I substituted 1 cup applesauce for the butter. Since the granola I had on hand already had almonds & coconut in it, I didn't add more. I also only made 18 huge muffins. Definitely a keeper!

Spinach Enchiladas

These were a big hit. I just added cubed chicken that I cooked with the onion & garlic. I also didn't have sour cream, but added more ricotta; nor did I have corn tortillas, but used whole wheat. So good!

Outrageous Chocolate Chip Cookies

My husband asked for a chewy peanut butter, chocolate chip cookie and I wanted to make it a bit healthy, so I searched Allrecipes for one with oatmeal. The reviews made it sound so good, I had to try it and I was not disappointed! The only change I made was to do half regular flour & half whole wheat. I also doubled the recipe and did what one reviewer suggested and switched the white sugar and brown sugar amounts around (so I guess that's 2 changes!). Very good!

Oatmeal Blueberry Muffins

Thought these were bland. I altered the recipe a little by substituting dark brown sugar for white, whole wheat flour for regular, adding cinnamon, and using 2 cups blueberries (admittedly, that was too many - I just had a bag of frozen blueberries from the summer and didn't realize it was 2 cups not 1). Not sure I'll make this recipe again.

Chewy Chocolate Chip Oatmeal Cookies

Definitely a keeper! I made a few adjustments. I prefer dark brown sugar in my cookies. I also used 3/4 cup white flour, 3/4 cup whole wheat. I cut the salt to 1/2 tsp. These won't last long!
