Microwave Peanut Brittle
Very tasty and easy! I tried this with the raw Spanish peanuts and dry roasted peanuts. Both worked. I also tried this with cinnamon extract instead of vanilla and this was also really good. I have a 1000 watt microwave and it didn't burn when I cooked the sugar, corn syrup and peanuts for 6 min, stirring energy 2 minutes. Added butter and vanilla and cooked 2 minutes. Then added the soda and turned out on a silicone baking sheet.

Cheesy Amish Breakfast Casserole
I made this for a breakfast potluck at work. It was really easy to make and everyone loved it! I did use the cubed potato hash browns with peppers and onions. This added a nice flavor to the dish. I also put it together the night before and baked it for 60 min in the morning. Will be making this again!

Cocktail Meatballs
I made these recently for my sister in law's baby shower and for a potluck. They went over great both times. I had a few meatballs left over so I added a little sirracha and made meatball sandwiches.
