Zucchini Boats on the Grill
I received absolutely rave reviews on this dish. I used real bacon instead of the bacon bits and used packaged bread crumbs. Oh, and I ran out of cheddar so I added some mozzerella to finish up the the cheese. I will definitely make this again as will my mother-in-law! Oh, one more thing... I forgot the chilies as well. Even after I sent my husband out on a special trip for them... hehe... he didn't miss them!

Apple-Raisin French Toast Casserole
Loved it! I did cut down the butter and added just a bit more vanilla. I also left out the raisins and added pecans instead. I did not overnight the dish so I soaked the bread in the egg mixture separately. The top turned out crunchy and the inside creamy. Both my husband and I really enjoyed this.

Easy Spicy Roasted Potatoes
This recipe turned out great! I will do this again. My husband loved them too. Because I can't follow an exact recipe, I added some ground rosemary and thyme and a bit of chopped garlic. I did not use cheddar cheese, but used Parmesan instead. It really is the hint of spiciness that does the trick. Thanks for the recipe!
