Norwegian Pancakes - Pannekaken

I think next time I'm going to try what another reviewer suggested: 1 egg, 1 tbsp sugar, 1 cu. flour, 1 cu. milk - otherwise it came out great! I put a thin layer of whipped cream cheese and low sugar strawberry preserves, rolled 'em up - thanks for sharing!!

Anaheim Fish Tacos

Since we moved to the east coast we tried "authentic" mexican food, but we never found anything like what you would find in SoCal or Arizona. We made the sauce with the left over juices as some other reviewers suggested. I also added lime zest, lemon pepper, and garlic salt to the mixture before adding the fish. All I can say is AWESOME.

Sugar Free Rugelach

Since I made some changes (not by choice) they had a lovely mild sweet taste to them. Great way to snack and satisfy your cravings without feeling guilty. A few of these could serve as a quick breakfast. Instead of walnuts, I used pecans. Instead of apricot preserves, I used Smucker's low sugar strawberry. Instead of margarine, I used 1/2 stick butter and 1/2 cup applesauce then added milled flaxseed for the pastry.***UPDATE*** I made this again but I didn't have cream cheese. I used sour cream and plain yogurt with a bit more flour, I had to bake it twice as long and it still came out awesome!! This is my favorite recipe, I will make this more often, maybe fill it with other things like tomatoes and mozzarella.

Creamed Chipped Beef On Toast

My grandpa would eat this all the time when he was aboard the USS California. Whenever my mom made this recipe, his face would light up as if it brought him back to those days in the Navy. Everyone in my family always enjoyed this, thanks for sharing!!!

Butter Flaky Pie Crust

I will never go back to pie crusts out of a box ever! This crust was much easier to prepare, roll out and the taste was hands down in comparison. I didn't crack when I was placing it in the pie pan, and cutting pieces for the lattice top. Even when I forgot to put cornstarch in my apple pie, the crust still held up well. I added egg wash on the bottom and top crust.

Grandma's Green Bean Casserole

Awesome! I was a little worried it wouldn't come out as good without the cream of whatever soup, but it still had a lot of flavor. I used fresh green beans, steamed them before mixing & I cut back on the cheese, I love cheese but I only used 1 cup, still very good. I will definitely make this again

Unbelievable Rolls

If you want a light, fluffy dinner roll, this isn't the recipe. I was disappointed, although they tasted great, the texture was too dense - almost biscuit-like. The dough was so sticky I had to keep adding flour. I'm not quite sure ut must have added 3 or 4 more cups of flour before I was able to work with it. Next time I'm going to try adding the salt after the flour is added; like another reviewer suggested, and also try using with self-rising flour.

Chewy Caramel

I recommend cutting down on the brown sugar, it was a bit too sweet, not as mellow. It was a bit too soft for me, but if you use it with apples, the tart of the apple and the caramel are perfect together. I ran out of butter and I used Crisco spray for the cookie sheet, and I cut the recipe in half so I'm wondering if that's the reason why it came out too soft or if I didn't cook it at a high enough temperature. Either way, it's still a great recipe, especially if you love caramel like me! I will definitely make this again

Creamy Banana Bread

I didn't get to try this creation I made but the ones that did loved it so much. I dropped it off at one location, then I got a call 20 minutes later that it was already gone! I didn't have pecans or baking soda so I added another teaspoon of baking powder. I also added sugar free vanilla pudding, raisins and about 1 cup of milk. I dusted the loaf pans with cinnamon and sugar and sprinkled flax seeds on top. You can also substitute the butter/margarine with flax seed meal. Great recipe, thanks for sharing!!!

Campbell's Kitchen Creamy Chicken Enchiladas

Super easy and versatile!!! One thing I add here that the recipe doesn't have is milk. Once I dump the canned soup in a bowl, I fill the can up with milk and pour it in. I find it too rich and salty if I don't use the milk. Sometimes I use the Campbell's Cheddar Jack Condensed Soup to spice things up. I also add diced green chiles or Rotel mild mix (for the kids). I also add canned black or pinto beans and rinse them off before I mix it with the chicken. I also marinade the chicken before I cook it with McCormick's Zesty Herb 30 minute marinade.

Cranberry Sauce I

I've been making this for a few years now and I've tweaked the recipe as others suggested, also added different juice (only because it's what me and my family prefer). 1/2 cup brown sugar, 1/2 cup white sugar, 1/2 cup of pineapple orange juice, and 1/2 cup of water, with a couple dashes of cinnamon. I grew up hating cranberry sauce especially because it was the kind out of a can, but once I found this recipe, I never turned back! I absolutely love it & bring it to holiday dinners, which so far no one even thinks about making fresh cranberry sauce!

Amish Friendship Bread II

A co-worker brought this from home with the starter bags so I took one home, and tried it out. It's a very versatile bread, you can add anything to it, and will still come out good. The best thing is, since I work 55-60 hrs a week, the fact that day 10 just happened to fall on the weekend was awesome, so now I have 2 loaves baking in the oven right now!!

Grilled Whole Turkey

Easy Garlic-Lemon Scallops

I made the mistake of getting scallops from the grocery store. They turned out rubbery. Make sure to use FRESH scallops that you can purchase from a seafood market, preferably right on the coast.
