About this Cook
I have always liked cooking and entertaining. My children are all grown and have moved away so I don't get the opportunity much any more. My incredible son has inherited the gene though. He and his lovely wife regularly host fabulous dinner parties.

I enjoy cooking comfort food. My family always enjoyed my meat loaf.
My favorite family cooking traditions
My mother always baked mountain of Christmas cookies. After she passed away I took over in her place. My children always looked forward to that time of the year for the cookie explosion.

Best City Chicken
I too grew up in the Midwest and remember my mom making this when I was a child with pork and veal cubes. I prepared exactly as indicated and found it to be a trip back to my childhood. The meat was tender and moist but the breading crisp as a result of the last step. I think the next time I make it I will marinate with garlic overnight as previously suggested and then maybe try panko crumbs dolled up with my own blend of seasoning. I also think I will bake over chicken stock instead of plain water. If I really want to feel guilty I might make a gravy using the bits left in the pan after browning along with the baking stock. I closed my eyes and thought I was back in my mother's kitchen. Thanks for the memories!

Suki's Spinach and Feta Pasta
Very delicious though i must admit I did make a couple of changes. I used 3/4 c chopped onion and 2 cloves of chopped garlic along with 2 pinches if red pepper flakes. I used whole wheat pasta because it is more healthy. During winter we don't get good fresh tomatoes so I used canned diced. Lastly, all I had in the house was garlic/herb feta and it turned out to be a great addition. The only substitution that might have changed the original recipe was the cheese. This is great but the addition of some sliced grilled chicken would make a full meal.

Ham and Cheese Bowties
I felt this was very bland. It could have been my fault though. I had no Colby cheese so I used Co-Jack and Co-Cheddar. I used 1-1/2 cloves of garlic and also added some onion powder and added more milk than the recipe called for as I felt it was too thick. I won't blame the recipe but the cook because of my substituted ingredients. I took it to a party and others felt is was good. The recipe yields quite a bit.
