Creamy Broccoli Soup

This was really delicious. Used Veggie broth and like a previous reviewer, wasn't so sure about big broccoli florets so I broke down and used the blender for just a split second. Flavor was great. Do yourself a favor and add the cheese. Will make this again!

Chili Potato Burritos

LOVED, loved, LOVED these! Did it a little backwards, since we realized last minute we had thrown away the baking dish we needed. Turned into a layered, yummy meal in a quiche dish. Really easy and delicious. Making it again right now :)

Red Enchilada Sauce

This was great - loved it. I used the tomato paste like previous reviewers had suggested and added extra chili powder for spice. One thing though, not exactly "enchilada sauce"... went great with the potato enchilada recipe on this site. My sweetheart and I both agreed - didn't taste so much like enchilada sauce, but still very tasty.

Mushroom and Leek Soup

I was so worried this would be fairly flavorless, because I used veggie stock, so I added a couple cloves of garlic and a wee bit more sherry. It was really nice and I would make this again in a heartbeat. Nice to find a soup without cream and it's still hearty and yummy.

Portobello Mushroom Stroganoff

This was good. I used sherry like suggested and very helpful to bring flavor. Sauce was too thick - I think there should have been something with the sour cream to make it a little smoother. Overall, a really good vegetarian meal - really easy.

Cream of Asparagus Soup II

This was SO easy and SO delicious! I took the advice of the previous reviewer and added the Cayenne pepper. I included it with the asparagus and broth in the first seven minutes. For those who don't like a kick to their soup - omit. Otherwise this was great. I was worried that the asparagus would need to be pureed - don't bother. Much more taist whole. Will do this over and over. Really quick and yummy (also - veggie broth is perfect).

Aaahh! Potato Soup

Even though I have an amazing gift of doing things backwards in the kitchen (and this was no exception), this soup turned out wonderful. I used 2% milk and it was delicious. Also added garlic, green onions and some red. Got great results and most importantly - kudos. Thanks!!

Carrot Chile and Cilantro Soup

Really much better than I thought. I could not locate the hand blender to save my life, so it was thicker and more of a puree. It was also better a few days later. Love spicy food, so I won't be as shy with the chili paste next time.

Unsloppy Joes

People are afraid to eat my cooking, and rightly so. This was so easy and looked good with some sharp cheddar topping. Healthy, easy dish. Also, I love spicy food, so the chili pepper was just right. Could even have used more.
