About this Cook
I'm adopted and am so glad my bio Mom decided to give birth to me in New Orleans. She is from Indiana. I grew up in a small town west of New Orleans called New Iberia on a dairy farm. Growing our own food and cooking is a way of life for us in Cajun country.
My favorite things to cook
I have several favorite things to cook: Crawfish etoufee, stuffed merliton and merliton bread. Red beans , sausage and rice. And of course gumbo. Using fresh herbs I grew in my garden.
My favorite family cooking traditions
When family and friends gather for a holiday or party and everyone pitches in to help out.
My cooking triumphs
Cooking a dish using several recipes and pulling together what I like and it turns out good. Finally mastered Roux with help from a friend.
My cooking tragedies
I've tried but just can't cook roux, so I buy the jar roux. Mixing Italian and Mexican seasoning in a chicken spaghetti.

Hot Pepper Jelly
This recipe is Awesome. I've been using it for 3 years now and selling them at local farmer's markets. I do use 2 packs of pectin and use half a cup of jalapeno's instead of a fourth cup. I've made an all green and an red pepper version. The all red peppers makes a very pleasing looking jelly. People think I am using food coloring but I don't. At a half cup of jalapeno's per batch it's a medium-hot flavor.

Marinated Mushrooms with Red Bell Peppers
Thank you for this simple and easy recipe. I have an abundance of bell peppers from my garden and am looking for different ways of preparing them. I did modify the recipe by using 1 whole onion cut in rings and several red bell peppers.

Summer Vegetable Ratatouille
The only thing I didn't have was the yellow squash. It still came out reaally good.
