Chef John's Buttermilk Biscuits

Whipped up a double batch of these beautiful buttermilk biscuits. Chef John, you never let me down. I watched the video to make sure I had a handle on the technique. My husband and daughter loved them; my grandfather proclaimed that surely the way to a man's heart is paved with these biscuits. The only change I made was to instead of cutting rounds and handling the dough that much more I used a pizza cutter to slice equal sized squares. Who says biscuits have to be round?

Sugared Campfire Donuts

Made these donuts during our last camping trip. Sometimes the method worked sometimes it didnt. The trial and error of it made for some good laughs around the campfire. We rolled them in to balls, stretched them out and wrapped the roasting stick but found that cooking them in a pan over the fire in melted butter worked the best. I'm only giving it 3 stars because they only turned out half the time and talk about high cal/high fat. Doubt I'll make them again.

Maple Walnut Fudge

Ugh. This recipe so sounded similar to my grandma's fudge recipes but a waaay smaller batch and a different flavor. I just had to try it - I was so hopeful. It did NOT turn out well at all and I think it mostly had to do with the directions but there wasnt a very maplely flavor and I use tsp extract. It's still edible so I'll bring it to Thanksgiving dinner and hope it gets eaten rather than wasted.

Pumpkin Cake III

I added more cinnamon and a dash or two of nutmeg and ginger - till it smelled right. To cut calories I used 3/4 cup applesauce and 1/2 cup oil. I preferpureed fresh pumpkin in place of canned. I lightly beat the eggs before adding them too. Cream cheese icing dusted with cinnamon complimented it perfectly and made for a fantastic presentation. I baked it for a birthday party where the birthday girl requested pumpkin cake. She and all our friends LOVED it. So moist! I'll be proud to serve it again, thanks for this recipe!

Pork Chile Rojo (Pulled Pork with Red Chile Sauce)

My family was throughly enjoyed this dish. I served with flour and corn tortillas. My fave was the corn, my husband preferred the flour. I also added a can of black olives to the rojo as it was simmering. Otherwise I followed this recipe to the letter Thank you so much for sharing!!

Hawaiian Wedding Cake I

This cake was very moist, heavy, and almost breakfasty. I followed this recipe exactly and although I do plan to make it again I also intend to tweek it a little. If you want a smoother texture whiz the coconut in your food processor before hand. Also next time I plan to add 1 tsp vanilla, a 1/4 tsp of cinnimon and nutmeg and subsitute 1/2 cup of the white sugar for brown. My family and friends all enjoyed this cake but all felt that the flavor was missing a certain "umph" we all agreed that it was a bit bland. With the above mentioned changes I think this cake could get a five star rating from this cook.

Peanut Butter Balls III

The trick to these is to pour the melted peanut butter mixture over the cereal mixture, then combind it by hand. Becareful it is hot! This recipe is exactly like one that my mother has made for years around the holidays. We also use other flavored chips like milk chocolate, butterscotch, white chocolate and my favorite peanut butter. I've been known to decorate with holiday sprinkles or mini choco chips and/or dallops of other melted chips. Oh so good and it makes for a pretty presentation. This is for sure a 5 star recipe, second to none. :o)

Meaty Thick Man Chili

This is a really good starting point chili. I used half of the meat and my husband still commented on how meaty it was. In his book, meaty = good. I cooked it in a crock pot and as it simmered away I would periodically tasted it. I was very acidic I combated that with a few tbsp of brown sugar. I also used a can of diced tomatos in addition to the tomato sauce. And a green and yellow pepper as that is what I had on hand. Yummy! I will definatly make this again!

Deluxe Waffles

Yummy, I fed my family with some homemade goodness this morning. I added some vanilla and cinnimon to my batch. My husband loved these waffles which he said tasted similar to french toast. 5 stars for sure!
