Broiled Sweet and Tangy Tilapia

My husband wasn't real fond of this one. While I did make one substitution (red wine vinegar for raspberry) the overall flavor left us both a bit wanting. I think next time I might through some chopped nuts into the glaze mix since it seems tilapia really picks up nutty flavors well. I would also add more lemo juice (not from concentrate.) Not bad, but don't know if I'll go out of my way to make it again since the flavor was a bit bland.

Caper Baked Chicken

Nice tangy flavor and very easy to make. I used Lea and Perrin's steak sauce which was perfect for this dish. I cut back on the butter a bit and eyeballed the capers and caper juice. (2 tbsp might be a bit much on both.) A great recipe. Will make again.

Almond-Crusted Tilapia

Excellent recipe! Just made it last night and it was a complete hit. No doubt the butter helps to make the end flavor terrific. I could also see using this breading recipe for orange roughy or other mild fish. I only had three filets and ended up using most of the egg mixture and much of the breading mixture as well. If serving this for a large group I would advise increasing the egg mixture and making sure you have extra almonds and cheese for the actual breading. Also, while the butter definitely helps with the flavor I may try finding any alternative next time to cut the calories. (But boy was the buttery flavor good!)

Rice and Lentil Casserole

Great, quick recipe that my husband loved. I didn't have the lentils, but used barley in a pinch. Next time I'm using the lentils since I know that will be even better. I threw in some steamed veggies at the end to make a one pan kind of meal. I also used very spicy sausage which was a hit.

Slow Cooker Lentil and Ham Soup

Loved this recipe and so did my husband. I didn't use teh celery so it wouldn't get mushy and I added more tomato sauce and ham to bulk it up a bit. Truly a fantastic soup that I ate for days afterward. Only needed to cook in my crock pot for 8 hours.

Mrs. Sigg's Snickerdoodles

Absolutely the best recipe for snickerdoodles I've ever made. These beat the ones I had growing up. Only baked for 8 minutes on an insulated cookie sheet and not a single one browned too much on the bottom. Just the right amount of soft and crispy and the flavor is truly excellent. Using good vanilla helps here I think.

Grilled Salmon I

Easy to prepare and a good flavor. Thought it migfht be a bit stronger in taste, but the marinade makes a nice carmelized crust when grilled which is tasty. I may add more lemon pepper next time around.

Anniversary Chicken I

The flavor of this dish is excellent and unique. I think I will mix the dressing and teriyaki in the future tries and perhaps look at real bacon.

Guilt-Free Snack Mix

Overall this is a great snack mix to have on hand. I used just dried cranberries instead of a tropical dried fruit mix. The corn cereal does get a bit soggy/moist which is a downfall, but I still like it overall.

Broiled Tilapia Parmesan

What a fantastic recipe and it was so simple. I made this last night and my husband kept saying that it tasted like something he would order at a restaurant. Very pleased. Great presentation too - I'll have to take a picture next time. I may try some white wine in the sauce next time or perhaps add some small capers. I will definitely make this again and again.

Spiced Chicken Loaf

This was a nice change from the regular, old meatloaf. I'm not a big onion fan, so I substitued and I think that made it a bit dry, so I may add a second egg next time. I used the tabasco ketchup that's out now and that added some good flavor. I will make this again and experiment a bit. Thanks.
