Fabulously Sweet Pear Cake
i'm used to making cakes with a hand blender, so to use a spatula to mix (gasp) was a change, but it's nice to go back to basics. the pears puree looks pretty good, my pears were just picked off my pear tree and so they weren't overripe. i substitued 1/2 the oil with apple sauce to cut down on calories and added 1 tsp of cinnimon. when i poured it into the pan it looked a bit liquidy. anyways i baked it and the sides burnt before the middle was cooked. and i had to cook ti for about 1 hour and 5 min to get the middle cooked. the edges and bottom of the cake are pretty charred. despite this it smelled great and tasted pretty good. i had to cut off the edges...but you can't really taste the pear though. and it's hard to cut. it's a nice sweet cake.

Mini Cheesecakes I
i loved loved loved these!!! i didn't have any cookie crumbs available, but i did have some chocolate cake, so i just crumbled that up and baked it a bit to dry it out before i put it in the muffin liners. i made about 1/2 the recipe and made 11 larger cheesecakes with the chocolate bottom. for 2 of them i put chocolate chips on top and for 3 of them i melted the chips and mixed it into the cream cheese mixture. i baked it for about 25 minutes, and am letting them cool. they are SOO good, seriously i would buy these. i'm eating one as we speak as the others are cooling. thanks for the recipe!

Self-Filled Cupcakes II
i made these and whipped the cream cheese well with the sugar/egg/salt. the end result was OK. i thought the cheese was TOO cheesey and it was just an unusual taste to have in a choc cupcake. i was disappointed b/c i expected a really good cupcake. i dont think i'll be making these again.
