Cobb Salad

My all time favorite salad! Nice recipe, but where's the olives? Just kidding, we all have slightly different versions, depending on the restaurants we have experienced. My latest effort used feta cheese, skipped the onions, added olives, and was smothered in blue cheese dressing. I also like to cut most ingredients into wedges and arrange them into radial pattern of triangular areas. But that's just me. I'm drooling on the keyboard thinking about this salad.

Jamie's Cranberry Spinach Salad

This is the recipe that got me hooked on allrecipes. I have made it for years now, and have tried an infinite variety of versions. I settled on adding chicken, sesame oil, mandarin oranges, and skipping the poppy seeds. Don't worry, I'm rating the original recipe, not my modifications. It is all good, both the original and just about any substitutions that you care to make, including lettuce for spinach (if you have to). The dressing is key, just keep the 1:1:1 ratio of sugar, oil, and vinegar and you can't go wrong.

Chicken Florentine Casserole

What a great change of pace from my normal chicken casseroles! Loved it. I, too, used fresh spinach and sauteed it with the mushrooms and chicken. And I slipped in a little cream cheese to smooth the sauce out. OK, it's not the original recipe to a tee, but the recipe is obviously great if it can take a few mods and still kick butt.

Cuban Midnight Sandwich

I prefer pork loin slices to turkey, so that's what I used. I baked my own rolls and used the extra mayo / Italian dressing for a dipping sauce, because our local deli does that for their grinders and we have become addicted to it. If you try that, slice the rolls into very skinny wedges to make it easier to dip. Want authentic? Use pork instead of turkey, skip the Italian dressing, and use Cuban rolls.
