Rosemary Slices

The only thing I would change about this recipe is cutting the amount of sugar down to 1/2 C. They were really good but so sweet they made my teeth cry! Also, i would put the slices back in the freezer for about 20 min while the oven is preheating, so that they hold their shape better while baking.

Candy Cane Coffee Cake

this is really a cherry-cheese danish recipe and i bring this to work when i need to manipulate my coworkers (vacation days, trading shifts, hiring decisions, etc). it has brainwashed them flawlessly. business comes to a grinding halt when you bring in a carafe of hot coffee as an added bonus and everyone gets to take a 10 minute vacation to paradise. tastes even better after sitting for a day.

not sure if this is supposed to taste like scrambled eggs or not, but it did. followed directions exactly, was super careful folding the whites, and still it came out with an OVERWHELMING egg taste. maybe thats the point of genoise, i don't know, but if you are just looking for a petits four base, i would not recommend this or ever use again.

Shiny Chocolate Glaze

use a microwave!! put all ingredients in a glass measuring cup and microwave for 15 seconds, stir, then another 15 seconds, and stir, until smooth. It was a little thick for my preference so I added a few TBS of hot strong coffee to thin it out (have used rum too!) and it was perfect. will use this 283928908 more times!

Blackened Tilapia with Secret Hobo Spices

5 stars for the hobo encounter alone! but the recipe itself is just as great. tilapia is a low fat, low saturated fat, low calorie, low carbohydrate and low sodium protein source with very low levels of mercury and this is a delicious way to prepare such a wonderful creature. make sure you've got some belgian beer on hand to wash it down (and drink one for the hobos who don't have the luxury of cooking such a delicious meal!)
