Simple Tuna Melt

I split it into two sandwiches and used what I had handy. No pickles. Swiss cheese instead of cheddar. I liked the way it turned out. A good quick lunch. Very easy. I'll make this again.

Soft Polenta with Spicy Tomato Sauce

This turned out great. Great presentation. Great combination of flavors with the mildness of the polenta and the sweet spiciness of the sauce. A great romantic dinner for me and my girlfriend.

Chickpea Salad with Red Onion and Tomato

Porcupine Meatballs II

It was a nice memory of what my mom used to make and it's good comfort food, but the meatballs fell apart on me and I feel like the sauce could use a little more of a kick.

Tomato Soup I

This is replacing my old Tomato soup recipe without a doubt. This was great! It had a good sweetness and flavor to it- not salty like many of the tomato soup recipes I've tried. It pairs well with basil and I might throw some in next time, but it was great as is.

Banana Banana Bread

My girlfriend loves it and insisted I give it a 5. I added the extra brown sugar but didn't change the cooking time or temperature. Really did turn out great, although I can understand the people who through in some cinamon and nutmeg. It's a strong banana flavor which I like, but others may not.

Great Mac and Cheese

I intend to make this again, but I'll probably reduce the amount of onion. But I loved the way the sauce came out. I ran short on milk and use a cup of water in it's place and it seemed to be just fine.

Fresh Asparagus Soup

I can't believe how good this was. My girlfriend and I love it. I will definitely make this again. I used regular milk instead of soy milk and chicken broth instead of vegetable broth, but that was just because I had those things around.

Chicken with Lemon-Caper Sauce II

My Girlfriend and I liked this recipe. Super quick and Super easy. Didn't have vermouth , but cooking sherry seemed just fine. My mom used to make a version of this recipe with chicken stock instead of lemon and I think I like this version with lemon better. Chicken stock was always too salty.

Gazpacho I

I served this meal to my friends on a hot summer night with some white wine and crusty bread and it was a hit. It could use a little more of a kick (might add tobasco next time), but was satisfying as is. Not perfect, but very good. A few days later, the left overs took on more of the vinegar flavor. If you make this it's important not to make it too long ahead of when you intend to serve it.

Meatless Stuffed Peppers

This recipe didn't work. Like other reviewers, I thought the filling was bland and had an unpleasant texture. I added feta on the top before baking but it wasn't much help. The whole thing reminded me and my girlfriend of eating ricotta cheese, but neither of us like ricotta. I think the problem comes from the misuse of tofu. In situations like this, it tends to respond more like a dairy free (and taste free) cheese than as a meat replacer. You could still use it to add protein to the dish, but I might up the amount of rice and decrease the tofu in the mix. I would also add more seasoning of some kind or another. I suspect that using seasoned ground beef in place of tofu would also solve these problems.
