I had never tried Snickerdoodles before I made these, but someone at work requested them. They are my new favorite cookie! They are yummmmmmmy!

Beth's Spicy Oatmeal Raisin Cookies

These are absolutely amazing. They stay soft for DAYS! I had soooo many compliments on these. I even had a few wedding proposals, ha. They are really that good. Try it out - You won't be disappointed.

My Crab Cakes

WOW! The only change I made was using Old Bay Blackened seasoning instead of regular. I also put some of it on the outside of the crabcakes after the bread crumbs to make them look like blackened crabcakes. They were a HUGE hit & I could barely believe I made something this good. I used Phillips crabmeat, & I imagine this made a big difference. I would never use another brand for ANY recipe, ever.

Homesteader Cornbread

This recipe is AMAZING! I added 1/4 cup chopped jalapenos & 1/4 cup whole kernal corn that I just mashed a little with a fork. I added that in after everything was mixed. Other than that, I followed it exactly, & it made amazingly moist, yummy cornbread. The cooking time & everything was very precise.

Sausage Brunch Casserole

This had a wonderful taste. I'll definitely make it again. I also baked my crescent dough for 5 minutes beforehand. The only slight problem I noticed was that the bottom crust was a little crispy. Maybe if cooked on 400 instead, it would work a little better.

Easiest Peanut Butter Fudge

Oh my goddddd. Someone come over & eat the rest of my pan of this for me! I can't stop eating it. I'm going to gain 294829842 pounds. This was SO easy to make. It set completely in like... an hour. You can eat it before then, but I like my fudge firmer than not. It is addicting, so watch out.

Ahi Poke Basic

Wow! I made this today out of some leftover VERY lightly seared ahi steaks. I had them in the fridge, so I cubed it up & used it. I didn't follow this recipe exactly, as I was missing some ingredients, but this is how I made it: I cubed the tuna & put it in a bowl. I added soy sauce, a little teryaki, ginger soy dressing/marinade I had on hand, crushed red pepper flakes, freshly ground pepper, minced garlic, & lime juice. I served it over sticky Japanese rice & it was AMAZING. It tasted exactly like I expected it to. Yum@!

Apple Filled Chicken in Pecan Creme Sauce

This is a great dish, but I would add less sugar next time - a lot less. By the time I was halfway through the dish, it was too sweet to eat. I had to stop right there. The sauce is a bit rich, too. If you cut down on the sugar, probably by half or more, it would be amazing.
