Chicken Suiza Cornbread Bake

This came out really good! I used the entire small can of diced chilies and omitted the mushrooms b/c hubby is not a fan and used half a diced red pepper instead. I used about 3/4 cup of sour cream and it was definitely enough. Came out delicious and hubby had to have a second serving.

Hubs ate this 3 days in a row for dinner and raved each time. The flavors layers are so intense. Made the recipe exactly as written and it was perfection.

Fried Corn with Smoked Sausage

AMAZING!! This will be on a permanent rotation in my household. You MUST try this over savory grits. Boil the grits in chicken broth instead of water and top with the corn sausage mixture. My husband and I could not get enough. Instead of MSG I used half a teaspoon of salt and half a teaspoon of sugar. Used andouille chicken sausage for a little kick. Can not rave about this meal enough.

Caramel Apple Pork Chops

This was amazing. I didn't use pecans just because I didn't have any. I just cooked two chops but still tripled the sauce based upon other reviews and baked in the oven at 350 for 30 minutes. Served with roasted sweet potatoes and sautéed green beans. Hubby raved.

Stuffed Eggplant Parmesan

Oh my oh my, this was delicious. I've never made eggplant before and this was so easy and better than what Ive had at restaurants. I microwaved my eggplants for 5 minutes before cutting them open to make the scooping easier. I sauteed 1lb of Italian Seasoned Ground Turkey with my onion and garlic until brown, and then cooked in my eggplant until it was soft. My cousin was over for dinner and insisted on having the recipe to take with him. This will be going on my rotation! Delicious and healthy.

Slow Cooker Pot Roast

This recipe was so easy and the flavor was fantastic. My meat came out extremely tender. I used the leftover meat to make breakfast tacos with scrambled eggs, salsa, and cheese. Yum Yum!

Great healthy recipe. I added red chili flakes to the stuffing the spice things up a bit. Great for dinner and the leftover stuffing was great over brown rice the next day.

Roast Pork with Maple and Mustard Glaze

This in one of my new favorite recipes on the site. It was so delicious! My BF even said that if I ever opened a restaurant, this HAS to be on the menu. After reading the other comments, I seasoned the pork loin with salt, pepper, onion powder and thyme, then I browned it on the stove before placing it in the roasting pan. I also reduced the sauce before pouring it over the meat. My pork was only a 1 and 1/2 lbs. I cooked it at 300 for an hour and a half until my meat thermometer read 160. It could not have been more perfect. I served it with oven roasted veggies and butternut squash risotto from Trader Joes. Thanks for the great recipe, Christine!

Amish Breakfast Casserole

This was phenomenal. I made this for breakfast on a weekend my parents came in town to visit. Rave reviews all around. Before I even woke up the next day, my parents had heated up leftovers and dug in!
