Texas Jambalaya

I used one chicken breast for the ham but left the sausage. Turned out to be a really good, quick dish. Might be better with one less can of beans, though.

African Chicken Stew

This is a great dish to change up your nightly meals. It can easily be modified to your taste. I used chicken broth and less peanut butter like others suggested. Add the peanut butter a little at a time to see how much you'd like. I used Peter Pan creamy PB vs. the natural style and it was fine. I might use a little less pepper next time, but overall this has a great flavor and will definitely become a regular in my home.

Chicken Curry I

My husband and I like most curries, but have not had much luck with this recipe. We tried cooking it in a slow cooker to let the flavors blend more but were still not impressed. It smells great but lacks something to pull the flavors out. Also, seems pasty...maybe a curry paste instead of the powder would make a smoother sauce.

We make this recipe all the time and have recommended it to many friends. It's so easy to make as you can keep most of the ingredients in your pantry to make any night you run out of fresh produce. Thanks for a great dish!

Blonde Brownies I

Double this recipe and bake in a 9x13. These are to die for...so, you'll need twice as many. I love to mix butterscotch and chocolate chips. Yum!

Chewy Chocolate Cookies II

I loved these chocolate cookies...very brownie-like. Even better if you add chocolate chips, peanut butter chips, white chocolate etc. Delicious!

Chicken Jerusalem II

I've made this recipe several times and loved it every time. It's good with or without artichokes. Could also add red bell pepper or some sundried tomatoes for more color. I always bake the chicken with rosemary which offers a wonderful flavor. Sherry is a nice white wine for a subtle sweetness.

Chicken Piccata III

This is a great basic recipe for chicken picatta. You really don't need more than 1/4 cup of flour, though. Otherwise, the sauce may become thick. I also prefer to use less lemon juice. 1/4 cup makes for a strong lemon flavor. A white wine is a good substitute for the broth.

Bell Pepper-Feta Pasta Toss

Very quick and easy, but a little too bland. Needs something to pull it all together. I lightly sauteed the vegetables in chicken broth, white wine and a little butter (not too much as you don't want to make this an unhealthy meal)to add a little liquid to the dish. Turned out pretty good. May try some sundried tomatoes next time.

Chicken Giardino

I tried this recipe in hopes of it tasting like a favorite restaurant entree. I, too, threw out the sauce and used the chicken and vegetables to make a separate dish. The sauce was really bad. Maybe the 1 T of thyme was wrong. Revisions necessary!
