Naan

Reviewed: Oct. 25, 2007
This recipe was delicious! A bit time consuming, but totally worth it. I substituted plain yogurt for milk (i ended up needing about twice what the recipe called for) and let it rise in a warm oven (I turned on the oven while I was making the dough, then turned it off and put the dough in to rise). I used the 1/2 t. of baking soda and the naan came out perfectly bubbly. The best method I found for cooking was simply an ungreased, uncovered nonstick pan over medium heat. I put the finished naan on aluminum foil, brushed it with garlic butter, wrapped it up and put it in the oven on warm. When the next naan is finished, pull the packet out of the oven, stack the naan on top of the previous one, et cetera.

Super Chunky Cookies

Reviewed: Jul. 26, 2005
These are the best cookies ever! I followed some of the other users' alterations and added some of my own for even better results. I substituted the following: 1 tsp. butter nut flavoring and 1 tsp. vanilla (instead of 2 tsp. vanilla), semi-sweet instead of bittersweet chunks, add 1/2 c. toasted walnuts, use a whole bag of toffee bits and add 1 c. toasted coconut. I also used Scharfenberger and El Rey chocolate for the chunks and Ghiradelli for the chips. Next time I'm going to try adding macadamia nuts!

Glazed Lemon Supreme Pound Cake

Reviewed: Jan. 1, 2007
This cake is fabulous! It is just the right density and the perfect balance of sweet and tart. The only change I made was using lemon pudding instead of gelatin. This recipe will definitely be in my permanent repertoire.

Pumpkin Roll with Toffee Cream Filling and Caramel Sauce

Reviewed: Jan. 1, 2007
I made this cake once, and ever since my husband's family demands it at every autumn gathering. The only thing I changed is that I think it needs a lot more rum. Before adding the whipped cream filling, I brush the interior side of the cake with rum (enough to soak through a little but not so much to make the whole cake soggy). I also add more rum to the filling. As other reviewers have mentioned, I too had a hard time finding toffee (without chocolate) so I used Werther's Originals. As a tip, if you are baking and you recipe calls for just a little bit of alcohol (such as this one), you can usually go to a well stocked liquer or party store and buy the mini airplane bottles for $1-$3. It is so much more reasonable than buying a $40 of alcohol that you won't use for a couple of tablespoons!

Asian Roll Lettuce Wrap

Reviewed: Jan. 1, 2007
I love this recipe! I skip the meatball making and just saute the ground turkey in a pan with the spices. I also use rice paper wraps instead of lettuce for ease of eating. It is a fun change to do an "assemble it yourself" dinner and this recipe is delicious. Thanks!

Coconut Cream Pie I

Reviewed: Mar. 28, 2007
This was a great recipe and so simple! I used the cook and serve coconut cream pudding with extra creamy cool whip for the filling and french vanilla cool whip for the topping. I toasted all the coconut and used a shortbread crust. I also think it would be excellent with a chocolate crust, so I might try that next time. Also, since there is nothing really perishable (besides the milk), this is a great recipe that you can keep all the ingredients on hand for when you have last minute guests. Thanks again!

Firecracker Grilled Alaska Salmon

Reviewed: Mar. 28, 2007
Delicious! It was too cold to grill so I baked the salmon at 400 like other reviewers have suggested. It had a really great flavor and a little kick. I served it with brown rice and a simple soy veggie stir fry. I can't wait to try it on the grill!

Hot Artichoke Spinach Dip

Reviewed: Jan. 1, 2007
I really like this dip and have made it several times, but the straight recipe is a bit too spinachy for me. This time I doubled the artichokes and cheeses and it was perfect! I also use a pre-shredded romano, asiago and parmesan mix in place of the romano and parmesan. Thanks so much for sharing this recipe, it is always a big hit whenever I make it.

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Jan. 1, 2007
This recipe is really good, quick and easy. It is nice served with linguine or fettucine. I would not say it was spectacular, but quite tasty and a good choice when you need a fast last minute meal.
