Garlic and Herb Cream Cheese

I omitted the butter, used lower fat cream cheese, and used about 1/8 tsp garlic powder instead of the 2 cloves. Because I am more likely to eat this on a bagel in the morning, the idea of fresh garlic in the a.m. does not appeal to me. It tastes good. I think next time I will add a dash of salt.

Hunt's® Tomato and Pesto Chicken

I'm a great cook, so I think my husband takes the taste of our regular meals for granted. However, there was something about this one that he commented twice on how good he thought it was. My only changes were sauteing a couple cloves of garlic in the oil before adding the chicken, making homemade pesto and adding at least twice as much as was written in the recipe, and simmering the chicken for 30 minutes. It was easy to put together and it tasted good on this early fall evening.

Erin's Cheesy Broccoli Soup

Creamy and delish. I used a whole package of fresh broccoli and added 2 carrots. It definitely needed more seasoning, but it was still a comforting, tasty, and filling soup.

Chicken Ratatouille

A family favorite loaded with veggies, lightly sauteed chicken breast and Italian seasoning. This is a great meal when we want to eat something that not only tastes delish, but is healthy, too.

Mexican Style Shredded Pork

Spicy Shrimp and Grits

I like this version of shrimp and grits. Slight spice. Pretty to look at with the green peppers, red tomatoes, and yellow cheese. The only change I made was to combine the uncooked shrimp with all the ingredients in the baking dish. It seemed like they would have been overcooked, otherwise. Next time I make it, I want to layer the dish. I will combine the vegetables and shrimp together and pour into the baking dish. Then I will combine the grits with the cheeses and pour on top of the shrimp layer. And, then top with a light layer of cheese. Like an upside down pineapple cake, I'm thinking this will be an upside down Spicy Shrimp and Grits.

Chinese Chicken Salad III

Yummy!! I probably added 1/8 cup of vegetable oil to the dressing and used a can of chow mein noodles instead of baking wontons. So good and satisfies my craving for Chinese Chicken Salad from Applebees.

Tomato Basil Parmesan Soup

Pretty to see. Heavenly to eat. My only change was real butter, cooking the roux longer to a light brown color, pureeing the vegetables, and using a combo or evaporated milk and 2% milk instead of half and half. Next time, I will through in a tsp of sugar.

Marinated Grilled Shrimp

Not a very strong marinade flavor which is perfect for the delicate meat of shrimp. I was out of plain tomato sauce and substituted Newman's Own bottled Marinara. It was very good.

Pork Tenderloin with Dijon Marsala Sauce

Easy and fabulous tasting. I served this with those little purple, red, and yellow potatoes cooked in chicken stock and then slightly browned in butter. Also had a side dish of peas. Yum! I followed another reviewer's comment and browned the pork, then smeared with mustard before baking. I cannot think of a single thing I'd change about this delightful dish.

Finnish Kropser (Baked Pancakes)

This just may become my favorite breakfast. Oh! Em! Gee! So custardy-good. I added a couple heaping teaspoons of wheat germ to help improve the nutritional and sprinkled the top with a hardy helping of blueberries. So delicious. Everyone (but weight conscience me) went back for seconds.
