Chinese Chicken Salad III

Yummy!! I probably added 1/8 cup of vegetable oil to the dressing and used a can of chow mein noodles instead of baking wontons. So good and satisfies my craving for Chinese Chicken Salad from Applebees.

Tomato Basil Parmesan Soup

Pretty to see. Heavenly to eat. My only change was real butter, cooking the roux longer to a light brown color, pureeing the vegetables, and using a combo or evaporated milk and 2% milk instead of half and half. Next time, I will through in a tsp of sugar.

Marinated Grilled Shrimp

Not a very strong marinade flavor which is perfect for the delicate meat of shrimp. I was out of plain tomato sauce and substituted Newman's Own bottled Marinara. It was very good.

Pork Tenderloin with Dijon Marsala Sauce

Easy and fabulous tasting. I served this with those little purple, red, and yellow potatoes cooked in chicken stock and then slightly browned in butter. Also had a side dish of peas. Yum! I followed another reviewer's comment and browned the pork, then smeared with mustard before baking. I cannot think of a single thing I'd change about this delightful dish.

Finnish Kropser (Baked Pancakes)

This just may become my favorite breakfast. Oh! Em! Gee! So custardy-good. I added a couple heaping teaspoons of wheat germ to help improve the nutritional and sprinkled the top with a hardy helping of blueberries. So delicious. Everyone (but weight conscience me) went back for seconds.

Garlicky Baked Butternut Squash

The adults liked, the teens did not. The garlic flavor was not overpowering and the color of the dish was gorgeous. I really like how the squash cooks up firm and is not the least bit mushy.

Mulligatawny Soup I

Total yum! I was afraid the curry would be so.... well... curry. Glad my fears didn't pan out. This is a wonderful, warm, soul satisfying soup on a cold day. To lower the fat, I divided the butter in half and added a couple tablespoons of olive oil. I also used whole milk in place of the cream. Delish.

Sausage, Peppers, Onions, and Potato Bake

This is very tasty, indeed. I found that I needed to cook everything in batches, even in a pretty large frying pan. Two pounds of sausage not only wound up being boiled instead of browned when I tried to cook it all together, but it also took longer than necessary. Splitting it into 2 batches was better. I also used some of the broth to deglaze the pan, at the end, and poured those tasty browned bits on top of all. So good. So Italian.

Cola Pork Chops

Surprisingly yummy. I increased the sauce by half and used root beer instead of cola flavored. Next time I prepare this, I will make it the same way.
