Peanut Butter Cookies IX

American Frittata

Good, but WAY too potato-y. I'd use maybe a third as many potatoes if I did it again, and twice as much onion. The bites that weren't full of potatoes were delicious, but most of it was just boiled potatoes loosely held together by egg.

Anna's Chocolate Chip Cookies

Excellent cookies! I cut the salt to a heaping half teaspoon, but otherwise made them exactly as written. They came out perfectly and are just as good a day later as they were fresh and gooey.

To Die For Blueberry Muffins

Great! All the other muffin recipes I've tried came out too cakey and got almost gluey when chewed. These were more biscuit-y, and not too sweet. It doesn't hurt that they come together ridiculously fast! I can go from 'craving' to 'MUFFIN!' in about twenty minutes.

Red Velvet Cupcakes

Cupcakes were a bit dry, even though I baked them for two minutes less than indicated. Flavor was good, though. Icing was very tasty, but only made enough to cover about half the cupcakes (which was okay, since I froze the other half of the cupcakes - this recipe makes a LOT!).

Tuna Noodle Casserole from Scratch

Not mind-blowing, but very good . I added a bit of nutmeg and thyme to the roux, and I put about half a cup of additional cheddar in the white sauce before mixing it with all the other stuff. I think it probably would've been a bit bland without those additions. Good recipe, though - I think every other recipe on the site uses canned soup...

Easy Beef Stroganoff

Eh. I made this mostly according to the recipe (doubled amount of mushrooms, added a little worcestershire), and it was just okay. Certainly edible and filling enough, but very bland. Tastes like Hamburger Helper.

Stuffed Peppers

My first time making these, and they turned out great! I followed the recipe to the letter except that I covered with foil for the first half hour and added some sharp cheddar in the last few minutes. I thought the texture of the peppers was really good - cooked, but crisp. They weren't mushy or overdone at all.

Baked Ziti II

Good stuff! Pretty quick to throw together and easy to make ahead of time. I made my own sauce and added some ground beef, and I substituted sour cream for half the ricotta because I didn't have enough ricotta on hand. Turned out great!

Curried Coconut Chicken

The entire time this was cooking, my husband kept insisting he wouldn't like it and asking that I make him a sandwich for dinner instead. He tried one bite after it was done and LOVED it. I'm not a stranger to curry, so I wasn't scared, but I thought it was great too. I followed the recipe just as written except that I simmered it for about two hours over medium-low heat. The sauce was nice and thick, and the chicken just fell apart - it was SO good. I'll definitely be making this again.

Great! Came together incredibly quickly, with just ingredients I had lying around, and tasted fantastic. I used three bananas and mashed them instead of slicing, but otherwise I used the recipe as-written.

Mediterranean Lemon Chicken

This was pretty good and very simple to make. The chicken turned out perfectly and the sauce was pretty yummy. My only criticism is that the lemon was quite overpowering - I couldn't even taste the garlic or oregano. Fortunately, chicken tasting only of lemon is still quite good.

Bacon Cheese Frittata

Very tasty - my husband ate almost an entire pan by himself. I thought there was maybe a bit much cheese, but it was otherwise tasty. I added some sauteed mushrooms too, which were really good.

Great! I found the batter disconcertingly thick (I'm used to pourable batter - this definitely was more gloppable, if anything), but they were very fluffy and tasted perfect.

Mom's Pumpkin Pie

Great texture - set up absolutely beautifully with a 40-minute bake time. I used canned pumpkin, so that might account for it not being runny like some have said. I took user advice and added a little more spice (1/2t allspice plus a bit more cinnamon and ginger), but I'd just use the recommended amounts in the future. It was plenty spicy for my tastes. Really pleased with my first pumpkin pie!

Oatmeal Raisin Cookies IV

Very good cookies! The texture is great, and the flavor is good. The best part is the big juicy raisins (the soaking is genius!). I added a half teaspoon of nutmeg, which I think added a lot to the cookies, and next time I would reduce the white sugar by quite a bit - these were very sweet.

Wow. These are great - crispy edges, chewy inside, very tasty. Almost broke my arm trying to mix the last of the flour in (crazy stiff dough), but it was worth it.
