Good New Orleans Creole Gumbo

I cut the recipe in half, eliminated the file (don't know what it is and couldn't find it) and added 1 1/3 C rice at the end. The consistency was perfect! I also didn't use the okra, but instead added a heaping tablespoon of cornstarch. Used a can of crabmeat. Yum!

Spinach Stuffed Chicken Breasts

Yum!!! did not butterfly but instead spread mixture on prosciutto on the breast and "rolled" and held with a toothpick. Baked at 400 on convection for 15 min covered then another 10 minutes uncovered. Then broiled for about 5 minutes. It oozed all over, but I just spooned the cheese/spinach mixture over the breast rolls. Very yummy.

Southwestern Cauliflower and Ham Soup

Keeper recipe. Added 3 potatoes and boiled them with the cauliflower. Also added 2 bay leaves. Then blended it all. Used about 3/4 cup of cheese. Yum.

Crusty Rolls

Beware to read through the instructions before making these for dinner. The "ready in 30 minutes" is not accurate as you have to let the dough rise for 1.5 hours. Start these rolls 2 hours before dinner time and you should be good to go. I tried to make this recipe with whole wheat flour...not too successful. The rolls were dense and not very crusty at all. Will try the less healthy bleached and enriched flour next time around.

Rocky Mountain Stew

Comfort food at its best! I coated the beef in flour before cooking it and omitted the peas (just don't like them). Since I coated the beef in flour, I did not need to add flour later. I did, as a result of coating the beef in flour, have to add water a couple of times to maintain the sauce consistency. Good stuff Maynard!

Excellent recipe! I did not have the mushrooms so I simply made it without them. I also subsitituted half & half for the heavy cream. I'd definitely make this one again.
