Buttercream Icing

Reviewed: Oct. 30, 2011
This icing has the perfect texture to work on a cake with, nice and soft... and the good part is it stays soft even after a night in the frig. It is a tad sweet though, nothing a glass of milk doesn't fix.

This was easy and I especially liked the crust. I was unsure about the jelly part but it works and tastes good.

Broccoli Potato Soup

Reviewed: Sep. 20, 2011
I'm not really sure how to rate this recipe because I ended up making alot of changes... as is it would have been rather bland for our family. I used two cans of potato soup, added four diced cooked potatos, added diced ham, onion powder, and a bit of chicken bouillon. I blend my youngest's serving to hide the veggies from her and my hubby said next time blend it all, he tought hers tasted even better! So excellent base recipe, easy to make and easy to play with to make it work for you!

Both kids ate this without a fight and smiles on their faces... that's always five stars in my book! Also it's easy to make and tastes great too!! Thank you!

Ratatouille Bake

Whipped this up for dinner tonight, so very easy and so very good! Took some convincing for my vegetable hating son to eat it but worth it because yum! Will make again for sure.

I like this because its a good way to sneak fruit and veggies past the kids lips... two birds with one stone and its a good breakfast or snack bread!

Cherry-Blueberry Pie

Reviewed: May 6, 2011
This was pretty good. My filling was a tad runny though... I was thinking maybe it was because I didn't let the blueberries thaw enough before using?

Peanut Butter Apple Dip

Reviewed: May 6, 2011
This was hit and miss with the kids, my daughter wouldn't have anything to do with it but Luke seemed to like it... but only by itself not on an apple or cracker!! ( I however loved it a little to much!)

Orange Herb Roasted Chicken

Reviewed: May 6, 2011
This made for a super moist chicken that tasted really good. I was a little sad that the orange didn't really give it much zing but still worth it!!

Honey Roasted Red Potatoes

Reviewed: May 6, 2011
These were easy and good with a simple dinner, they did lack the sweet honey pop my husband was hoping for though. I may do them again, but tweak it to be a little more jazzy....

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Reviewed: May 6, 2011
I was happy, both my kids gobbled these up. (anything that both of them eat without trouble gets five stars in my book!!) I thawed and sliced my frozen strawberries. Will make again for sure!

Peanut Butter No-Bakes

Reviewed: Mar. 23, 2011
I wanted to make peanut butter balls but was out of honey so I made these. They are a easy quick snack but I think if you attempt to store (even chilled) and eat them later you'll just get a soggy mess. Good enough if you want something peanut buttery in a pinch though. (won't make you three dozen though! unless you make them SUPER tiny!).

Made it with salisbury steak... It was good, nice change from just plain old sauteed mushrooms.

Pizza Casserole

Reviewed: Mar. 4, 2011
I loved this! My daughter gave it a gold star, my son wasn't thrilled but I'm pretty sure its because I didn't chop the veggies quite small enough to hide them! I used whole wheat rotini noodles, orange pepper and added mushrooms and italian seasoning. One thing I did different though was I did the meat and veggies separate, I sauted the veggies and pepperoni together in the hamburger juices... I think it makes the pepperoni flavour stand out nice!

Oven Omelet

Reviewed: Feb. 27, 2011
My hubby gets the credit for this one. Not only did I get to sleep in this morning, I woke up to the fabulous smell of this in the oven! He made a few changes though. Used a garlic onion cheese we had in the frig that really helped flavour it up some and used spinach instead of potatos.... plus used more eggs and more milk to make it bigger! Nice and fluffy!

Sweetheart Cupcakes

Reviewed: Feb. 26, 2011
Great idea, works perfect... instead of bags for the coloured batter I used my plastic icing containers to squirt it in. Kept my four year old busy for quite a while helping me create rainbow cupcakes... we used blue and pink batter.
