I liked this recipe and I would make it again. I am a big fan of coconut shrimp. The ingredients are simple. I used orange marmalade and a little horseradish to make a sauce which was very yummy. I heated it in the microwave to combine the indgredients. It is a little time consuming and I think it is too sweet to serve as an entree'. It would be better served as an appetizer. Also, you have to make sure that your oil is the right temp. I had a little trouble. I don't have a fryer or a proper thermometer. I just heated oil in a small pot on the stove. I had trouble regulating the temp. Next time I make this dish I will make sure that I have better tools.
