Slow Cooker Lasagna II

I thought this was pretty good, but it was a little dry for my tastes. My husband liked it more than my regular lasagna, my son liked it less. Made it exactly like the recipe. Had to peel the cheese off the top and dispose of it...was like leather! If I make it again, I will add cheese near the end and cook it less time....maybe 6-7 hours?

Chicken Alfredo

I was looking for something to make tonight with what I had in the kitchen. I knew I had chicken, and my first thought was chicken alfredo...I did not have broccoli or zucchini, but I did have a bag of frozen red pepper and chopped mushroom pieces, chicken, cream cheese and butter! Made it just like the recipe says, minus the green veggies...Was DELICIOUS! Thanks for making my night.

Saffron Rice

I made this for 2 of my husband's co-workers that came to Texas for a month from India. I, for one, am in love with this rice! It is so fragrant and delicious. The guys from India said it was good, too, although they were so polite about everything and had nothing negative to say the entire time they were here! :) Thanks for the recipe! I will be making it again!

Chinese Green Bean Stir-Fry

I thought these were quite good, but my only complaint is that they were slightly bland. It may be because I had to make my own black bean sauce (I couldn't find it anywhere!). I used a black bean sauce recipe from another site because I was desperate! I will make this again when I am able to go to an Asian store to get the black bean sauce!

Baked Teriyaki Chicken

The entire family thought this was really yummy! I wasn't sure if I was supposed to use boneless thighs, but I did, and they were great. I did half the soy sauce and used flour (twice as much) for the cornstarch, since I was out, and used brown sugar instead of white. I actually doubled the sauce based on the comments here, but had way too much left, because I did not dump it in the pan--I brushed it on as instructed. Because my oven runs so hot, I lowered the temp to 400. This was an excellent dish, and the leftovers (barely any!) will make a nice lunch tomorrow!

Beef Bourguignon II

Mmmm, I thought this dish was wonderful! I followed the recipe as written for the most part, BUT, I used dried parsley instead of fresh. Fresh would make it even better. I also could not find the canned onions--I found some in a jar, but they ended up tasting pretty yucky in this dish. Can someone give me an idea of where to find the canned onions? If not, I'll use all chopped onions next time (although I liked the look of having the whole petite onions in the dish!). Thanks for a great recipe that we will enjoy again soon!

Creamy Beef Casserole

I LOVED this dish! However, the two teenagers didn't care for it, and my husband thought it was just "okay" (that's why I gave it 4 stars-I averaged all of our ratings!). To me, this is the ultimate in comfort food, just like other users have said. I didn't change anything, other than halving the recipe. Looks like I'll get to enjoy the leftovers! This will make a great pot-luck dish!

Mission Mexican Pizza

THIS WAS GREAT! "Better than Taco Bell," said my son! Now, that's a compliment! I used some of the ideas from others, based on what I knew my kids would like. First off, I cooked my ground beef just like I would do for tacos (that includes lots of seasonings and salsa). I did have to heat the tortillas for 8 minutes to get them just right. Instead of pizza sauce, I combined a can of Hatch green chili enchilada sauce and Hatch Tex-Mex enchilada sauce and used that instead. I left off the tomatoes and cilantro. So, I know what you're thinking--it was basically just a taco. I will disagree, though. It is the baked flour tortillas that make this so good! Thanks for a great recipe!

Slow Cooker Thai Pork with Rice

I thought this was very good! I increased the amount of teriyaki and rice wine vinegar so that there would be a little more sauce, and I, too, put the red pepper in the crock pot during the last hour of cooking. I also increased the peanut butter, but next time, I'll use the amount suggested in the recipe. Both of my boys tasted it and said that something was missing. They then sprinkled it with "Rooster" sauce (Sriracha Hot Chili Sauce), and that did the trick! It just wasn't hot enough for them! Thanks for a great recipe!

Leftover Chicken a la King

I thought this went over very well! I used 1 cup chicken broth, 1/4 cup white cooking wine and 1/4 cup water. I used probably a TBSP of cornstarch, but at the very end, when it still wasn't thickening, I removed about 2 TBSP of the liquid and added a tiny bit of flour to make a paste. When I added it back in it thickened up nicely. I added various spices that we like, served it over rice, and everyone ate a bunch! Thanks for the recipe!

Easy Creamy Pork Tenderloin

I never would have thought about cooking a pork tenderloin in a slow cooker until I read this recipe! This was wonderful! I admit that I followed some suggestions of other reviewers: I browned the tenderloin first and I didn't use the cream of celery soup (I just don't like celery!). Instead, I used cream of potato and cream of mushroom soup. I also cut up a potato or two and threw in some baby carrots. One time I even threw in asparagus! It's very, very good--the whole family loves it!

Chicken Zucchini Casserole

What a family-pleaser! I made it almost exactly to the recipe: my leftover chicken was mesquite-smoked rotisserie chicken from the grocery store, and I used half zuchini and half summer squash instead of JUST zuchini. It was great the next day, too! THANK YOU for an easy recipe that everyone likes!

Romantic Chicken with Artichokes and Mushrooms

I thought this was pretty good! Most of my family liked it, but they didn't rave about it like they did the Camembert Chicken that I made earlier this week. I did what a few others did--I dredged the chicken in flour and various seasonings, threw minced garlic in the butter and oil, and then fried the breasts. After taking the breasts out of the pan, I threw a bit of wine in the pan and scraped up the brown bits. Then I cooked the mushrooms, onion and artichokes. After they were tender, I then added the artichoke liquid (from non-marinated artichokes) and some wine. I didn't measure, but I didn't use near as much liquid as the recipe said. The liquid thickened right up because of the browned bits of flour. I thought it was a great way to dress up chicken! Thanks for the recipe!

Camembert Chicken

I made this last night, and my family loved it! They thought it was really "fancy". My 12 year old even complimented me on the presentation! I made a few changes--I browned the chicken breasts in about 1 TBSP of butter and a little canola oil. While the chicken was cooking, I sprinkled the breasts with chicken fajita seasoning (we just love the variety of flavors in this seasoning!). I could not find Camembert cheese, so I used brie. My kids won't eat avacado, so I left that out on their portion. We used the sauce on our asparagus as well. My 16 year old wants me to make it with cauliflower next time, because he thought the sauce would be perfect on it. I thought it was great! Thanks for the recipe!

Parmesan Pork Tenderloin

This was delicious! I made the recipe almost exactly as written--I might have made the cutlets a little thinner than 1/2 inch, though. My son suggested melting a little square of mozzarella on top next time, so I may try that! Very tender, very good flavor! Thanks!

Baby Back Ribs

DELICIOUS!!! I didn't think it was as easy to clean up as other people did, though. Several of my foil packets leaked and left a mess in the oven. I had put a sheet of foil down as protection, but I missed a few spots! Definitely the best ribs I'VE ever made!!! I used Sweet Baby Ray's BBQ sauce, by the way! Thanks for a keeper!
