Bran Muffins II

I was a bit suspicious about this recipe and its reviews. My very first attempt at making muffins. They were fantastic. I bought Kellogs All Bran buds by mistake and used those instead, used 1/2 a cup of shortening and topped the rest of the cup with Organic Apple Sauce. I only used 2 cups of sugar, brown sugar and added a cup of chopped walnuts. Oh, I also used whole wheat flour instead of white flour. I was suspicious of the batter when I looked at it almost a day and a half later but perservered and would you know it - fantastic muffins. I probably overbaked them by a minute! Next time, I will make the following changes: use whole wheat flour, bran flakes, 2 cups of brown sugar, 1/2 cup shortening and 1/2 cup apple sauce and add walnuts. The magic is the batter lasting 6 weeks - how good can this be!!!! It's funny, I seemed to make so many changes from the recipe which is daft really - how can you judge a recipe if you make all these changes - yet they were fantastic and I will stick to my changes. 4 weeks later: I would like to add that the mixture didn't however make 48 muffins. I only got 36 and mine weren't enormous.

Eggless Pasta

I wanted to edit my original post but couldn't so am adding another. I still think this recipe is great and even made some pasta with the Kitchen Aid extruder very successfully. I add 1 tbs of olive oil plus an extra 1/4 cup of water but I think I should try and cut down on the water. I am going to try with less water as with the extruder I think the pasta needs to be dryer. I posted a picture of large macaroni made with the extruder. I also made some bucatini. It was also fab.

I was a bit suspect about the reviews of this recipe wondering how something so simple could be so fantastic. To give the recipe its due, I followed it to the letter (which is unlike me usually) - it was FANTASTIC. So, so simple and so quick. I made it with skinless, boneless thighs and that made it low fat and oh so so scrummy. I have passed it on to friends and will definitely make it again and again.

Easy Pineapple Cake

My rating is not fair because I didn't really try the recipe. I read the reviews and added 1/2 cup of vegetable oil, 1 cup of chopped walnuts, a third egg and a very overripe banana. The result was delicious. It baked in 30 minutes. I also drained the pineapple and didn't add the juice and added only 1 cup of sugar. My cake was very moist and needs no icing. If I had put in 2 cups, this cake would have been disgustingly sweet. Also, I don't know how it would serve 24. Perhaps 16 at a max but there would then be no seconds!
