Brown Rice and Black Bean Casserole

Great flavor! I used pepper jack cheese instead. Next time I will add more rice. this is a keeper.

Black Bean and Corn Quesadillas

These were great! I have made them many times. They are a little sweet, which we like. You could leave the brown sugar out. Tonight I made nachos with the mixture, adding cheese onto the chips and baking a little in the oven, then serving with guacamole and salsa. Wonderful! You could make a burrito with the leftovers, freeze them, then pop them in the microwave.

Braised Balsamic Chicken

We love balsamic vinegar. I cut it down to 1/3 cup and thought it was still too strong. Maybe adding a little sugar would help. My husband liked it anyway!

Chocolate Cream Pudding

I have no idea what went wrong, but it never thickened. It also didn't taste good...actually was strange tasting chocolate soup. Maybe my cornstarch didn't work??

Chicken, Asparagus, and Mushroom Skillet

Sorry guys...I love all the ingredients but all we could taste was the asparagus. It just didn't have any "zip" at all. I added onion and a little extra wine to it also. I don't think I'll make it again.

Broccoli Casserole III

This was a fantastic recipe and I only made two small changes. I mixed in a little bread crumbs with the cracker crumbs. Some people thought the crackers were too overpowering. I also used Velveeta and cheddar cheese and added a little half and half when I melted some of the velveets before putting it on the broccoli. I will definitely make this again and got many rave reviews when I made it.

Penne with Shrimp

Great low cal recipe! I added extra garlic, fresh basil and red pepper flakes as others suggested. I also added a little extra wine. My sauce cooked at a higher temperature than it should have, so it coooked down quite a bit, but was still wonderful. It was a very light pasta dish and I will be making it often!

The Meatball that Fell Off the Table

I am a nutmeg lover, but thought it gave the meatballs a strange taste when combined with the cream of mushroom soup. I'll stick with my old meatball recipe.

Lemon Herbed Salmon

This was wonderful. We eat salmon often and I am always looking for a different way to cook it. I may try substituting the butter with olive oil to make it a little more healthy...I'll see how it tastes!

This is my favorite recipe from allrecipes.com. Absolutely wonderful! I have substituted vegetables for what I have had on hand. It is a thick hearty soup and also freezes well. You might need to add a little extra broth or water if it thickens too much.

Garlic Cheddar Chicken

I was really disappointed with this. I did use preshredded cheddar cheese and a brand name. It never melted. It tasted like a commercial frozen meal! Not a keeper!
