Tater-Dipped Eggplant

Really good. Also threw a few cauliflower florets in there done in the same manner and they were also very good. Can't wait to try green tomatoes this way but thanks to our drought, I don't have any. Maybe next year.

Kentucky Biscuits

I really liked these and the only difference between this recipe and my old one is the addition of the baking soda. The edges are crispy while the insides are tender and they actually have a flavor other than just tasting "floury". I didn't have buttermilk, just used 2%. Thank you for sharing this recipe, Cookin'!

Very good and so much easier (and cheaper) than the other recipe we tried. Used one cup of butterscotch chips with two cups of chocolate chips and topped it with toffee chips, in place of nuts. Be aware that the toffee chips will soften if the fudge is not eaten soon, though.

Easy Granola Bars

These were a big hit at my house and couldn't be any easier. I used regular oats, and toasted them and the coconut and nuts (I used pecans), beforehand. I can't wait to customize them.

Bow Tie Lemon Chicken

I thought the sauce was a good base although I think broccoli might be a better complement to the lemony flavor than peas. (We're not big pea fans around here.) I will make this again, making double or maybe one-and-a-half times the amount of sauce. Thank you for the recipe.

Hazelnut Chocolate Chip Scones

I just made these and they are going fast. I made a few, minor changes. Substituted margarine for the butter, and sliced almonds for the hazelnuts. We like that these aren't too sweet, which I think is typical of a scone vs a cookie. The only problem I had was with the pre-cutting step. It was going to make a huge mess, so when they were done and while they were still warm, I punched straight down repeatedly with a silicon spatula to cut instead of trying to drag a knife across. Made a pretty clean cut that way. Quick way to satisfy a cookie craving and great with a cup of coffee. Thanks for the recipe.

Neapolitan Cookies II

Just mixed these up and notice the other two neapolitan cookie recipes call for 1 1/2 cups of sugar, while this one only calls for 1/2 cup. Is this an error? Oh, well, I guess I'll find out. Just thought I'd alert other people who may be drawn into making these because of the purty picture like I was.
