Savory Garlic Marinated Steaks

My all-time favorite marinade! I make it exactly as written except that I omit the cayenne pepper because that's not something I generally have on hand. We have used this with several kinds of steak, as well as with chicken breasts, and it comes out all tasting incredible every time. The marinade keeps well, so sometimes we even reuse it - marinade chicken breasts in it overnight, pop the chicken on the grill for dinner, then put steaks in the marinade for another overnight soak and grill them the following night. Works great! :)

Flourless Peanut Butter Cookies

Wow. Well, these are tasty, but the recipe VASTLY underestimates how many it makes. I was baking for my job in a cafe and wanted 24 servings rather than 6, so I quadrupled the recipe - used 4 c pb, 4 c sugar, 4 eggs, and 4 tsp vanilla - and because "rounded teaspoons" seemed way too tiny to me, I used rounded *tablespoonfuls.* I expected that it would make the suggested yield of four dozen (or 24 servings) in this case, or less because I used tablespoons instead of teaspoons, but you know what? It made SEVEN (count 'em, 7!) dozen cookies! The extras might have been nice if I'd just made one batch at home or something, but it was a total pain to scoop, roll, and fork down seven dozen cookies. So just know that even if you make bigger cookies than the recipe suggests, expect more than it says to expect!!

Garlic Butter Shrimp

Made this tonight for boyfriend and a guest - was delicious and pretty healthy. I used more like 1/4 cup of garlic (in my opinion, you can never have too much garlic, and once I mixed it in with everything else, it didn't seem like too much), used Trader Joes' Papardelle pasta instead of rice, and added in chopped fresh parsley at the end (that's important - it would have been much more bland looking and tasting without that). It was great - I think next time I'll mix in a little heavy cream in the end to liven up the pasta and give it a creamier flavor. But all in all - delicious!!

Chocolate Napoleons

This was strikingly easy to make, and very good, too. My boyfriend says that Napoleons are his favorite dessert and requested that I make them for his birthday instead of cake, so I prepared this recipe (albeit with a little nervousness, as it had no reviews yet). It was quick, easy, and he LOVED it. I thought it was just okay, but according to him, it tastes just like the Napoleons he had as a kid in downtown NYC and totally brought him back. So, thanks for helping me make my man so happy on his birthday! ;) Oh - also - I used chocolate syrup, like the kind you put on ice cream, on the top rather than baking chocolate because we already had the syrup at home and I didn't want to spend the extra $4 - it worked just perfectly.

Whole Wheat Beer Bread

This is my favorite beer bread recipe - it's incredibly tasty, and I love to use whole wheat flour wherever I can (if you do too, check out the recipe for "Whole Wheat Ginger Snaps" on here - SO GOOD!). Being a broke college student, I of course drink and bake with the cheapest beer available in the area, which is Lionshead - costs me about fifty cents a bottle. And frankly, I find it delicious that way! Another reviewer said they did a taste-test and people like cheaper beer, so I think there may be something to that... :)

Chicken and Pasta in a Mango Cream Sauce

You know... I'm generally not all that hard to please, but I'm with Ewa on this one. I was really excited to make it because I love all of the flavors that go into it, but was less than satisfied with it when I was done. First, the portions were huge - I scaled it to two servings and made it for myself, intending to have half tonight and half tomorrow, and I could never finish all that by myself in two meals even if I loved it. Second, I don't know what the photographer did differently to create what is depicted in the photo - I followed the recipe to a T - but mine didn't look anything like that. It looked mushy and had an almost uniform icky color throughout. Thirdly (and most importantly), I didn't like it! It wasn't so bad that I couldn't eat it - given that I was hungry and didn't have time to make a new dinner, I didn't have much choice - but I didn't enjoy it at all and am considering throwing out tomorrow's portion. I hate to waste the money, but I have no desire to go near that dish again!

Brigid's Blackberry Pie

When I make blackberry pie (my favorite), I like this recipe best for making the inside. I find it MUCH tastier when I make my own crust, though. It's not as hard as it sounds!

Lemon Rosemary Salmon

This has become my absolute favorite way to cook salmon. I don't always have fresh rosemary on hand, but the kind you can buy in a jar works just fine. I often use honey or maple syrup instead of olive oil to sweeten the fish; the kids like it better that way. Also, I find it tastes better with a little pepper and garlic in addition to the salt and rosemary.

Clone of a Cinnabon

I made these for breakfast a few days ago for my full extended family. Everyone LOVED them - my uncle even said they were the best cinnamon rolls he'd ever had. The only things I'd change - double the frosting, and use margarine in it (or less butter) because otherwise it tastes very strongly of butter; mix the cinnamon, sugar, and butter for the middle together before spreading them on the dough so it doesn't all melt out; and cook them an extra five minutes at 350 degrees instead of 400. They come out just perfectly this way!

Best Brownies

These brownies are great. I made them a few nights ago for dessert for the family, and everyone loved them, as usual. I must admit that it's not my favorite brownie recipe - but these were rich and delicious, and definitely take 2nd place in my book. That's high praise, too; I've made lots of brownies in my time. The frosting is great, as well, but it needs 1/2 cup of confectioners' sugar instead of 1 cup and a tablespoon of milk mixed in. This creates more of a glaze and it's MUCH better that way!

Angel Chicken Pasta

This is my favorite dinner to cook, both for family and for guests. It's easy, and everyone I make it for loves it - I have been asked to share the recipe every time. It goes wonderfully with fresh steamed vegetables; I like zucchini and green beans. My only tip - and this is a big one - make 1-1/2 times the sauce, or even double it. My family much prefers this meal when there is enough sauce to cover both the chicken and all of the pasta once the chicken is gone.
