Filipino Lumpia

I cooked my beef and pork before I added the veggies. I also added about 1 tbl. of soy and one egg to the meat and veggie mix. The square wrappers work the best. Make sure to seal them well with water.

Sour Cream Noodle Bake

Good casserole dish. I used a can of tomato soup instead of tomato sauce. I also only had about 6 ounces of noodles to use. I layered the dish in a glass casserole. Beef/soup mix, then the noodles, then the sour cream/cottage cheese mix, then a second layer of each and topped with the cheese. It was not creamy this way, more like a lasagna.

Penne with Chicken and Broccoli

We found this to be a tasty one. I like my broccoli tender, but not mushy so I cooked it for a few min. more. I only used one half cup of the pasta cooking water for the sauce. But then doubled the cheese. My family did not request it in the weekly rotation, but it will come up on the monthly menu.

Lemon Poppy Seed Muffins I

I followed TAMBUTLER review and changed a few things per the review. I did double the lemon zest though. Good muffins and moist. Make sure you add lemon extract. I made mine in a mini muffin tin, baking 10 -11 min.

Slow-Cooker Pepper Steak

This smells so good as it cooks! I did as other reviewers suggested and put half the peppers in at the end so they would not be as mushy. I cut my meat while it was still slightly frozen because it slices easier. I used a whole onion and 2 cans of beef broth and doubled the cornstarch to make it thicker. I also omitted the salt because of all the other salty ingredients. Served over steamed rice. Yummy!

Spanish Rice Bake

This make a good pot luck dish. Noticing some of the other reviews about the rice not getting done, I decided to cook the rice in the water, tomato mix without adding the meat until the rice was near done. I used one can of beef broth also so it would not seem so dry. I added a dash of cayenne pepper for some heat. I liked the hot/slightly sweet flavor. The three dishes to cook in is a lot for a one dish meal. But it is worth the extra washing.

Cottage Cheese Chicken Enchiladas

WOW! These are good. I took a chance because of all the good reviews on this one. Cottage cheese in enchiladas?! I am so glad that I did. These are excellent! I stirred 1 1/2 cups of grated cheese into the sour cream, cottage mix to cut down on a step. I also used a cooked whole chicken, de-boned and shredded. I used two cans of enchilada sauce,but,I did not increase any other ingredients. I dip my tortillas in the sauce before I fill them to keep them soft and they won't crack. This made 25 enchiladas. So good!! Thank you for this one!

Super Sloppy Joes

Yummy Sloppy Joes! I did double the recipe so there would be plenty to freeze. I used BBQ sauce instead of the steak sauce. I also added 1/2 tsp. chili powder and 1/2 tsp. of cayenne pepper. I placed it in my slow cooker for 4 hours on low. Dinner was waiting when we got home from errands. Very good!

Homemade Butter

Very yummy and easy too! We are studying through the Little House series and wanted to try to make butter-the easy way! We used the liquid that we pressed out of the butter for buttermilk cornbread. We added 3 drops of yellow food coloring to the cream before we started.What a tasty lesson!

Jiffy Casserole

This reminded me of tater tot casserole without the crunch of the tots. I followed other suggestions and used 2 cans of soup, one mushroom, one celery and cooking the onion with the beef. I also used 1 1/2 pound of beef and only 3 potatoes. I microwaved my potatoes for 4 min. before pealing and slicing. I used a 2.5 liter Corning wear dish. The casserole only had to cook 30 min. before it was done.
