Lemon Cupcake with Blackberry Buttercream

I made these for Mother's Day and they were awesome! The batter to so versatile that it will be my new "go-to" recipe for any flavored cupcakes! I doubled the cake recipe and got 42 cupcakes. I added quite a bit more lemon juice because I wanted the flavor to really come through and I'm glad I did! The cupcakes do not rise very much; I filled the cupcake pans 3/4 full and they rose just up to the edge of the paper cupcake liners. I also made a quick filling using some cream cheese, lemon curd, and powdered sugar and filled the cupcakes after they were cooled. I rolled a blackberry in sugar and placed it on the top of the icing. Very professional looking!

Italian Beef Sandwiches

My VERY picky husband couldn't stop talking about these sandwiches last night! The au jus is perfect. I omitted the peppers for personal preference. I also buttered the sub rolls and broiled them for a few minutes in the oven. This made them taste more like resturant style french dip. I also added some pepper jack cheese to my husband's roll while it was toasting. But the basic part of this recipe, the au jus, is perfect just the way it is! My new busy night favorite.

Black Bottom Cupcakes II

Wonderful!! I used the tip from another reader and put the filling in a zip lock bag and squeezed it into the center of each cupcake. I think this made it easier to get the filling down into the bottom of the cupcakes. I also frosted these with the whipped cream cheese frosting from this site. I thought it might be too sweet, but the frosting is so light that it makes these perfect. I got RAVE reviews from family and co-workers!

Best Toffee Ever - Super Easy

My Mom made toffee like this every Christmas. To get chocolate on both sides, I use my mother's method. She would sprinkle an even layer of chocolate chips and pecans on the jelly roll pan before pouring the toffee mixture on top. Then she would wait until the candy had set up a bit, but was still warm. She would break up a large Hershey's candy bar and place the individual squares all over the toffee mixture. After sitting for a few moments, she would CAREFULLY spread the melted chocolate all over the toffee and top w/more chopped pecans. I also remember her spraying the pan w/a little Pam before sprinkling the chocolate chips. So wonderful!!

Whipped Cream Cream Cheese Frosting

I have a new favorite! I used the frosting on cupcakes I took to work. The response was incredible! Everyone loved it and 2 co workers approached me to make them just a bowl of the frosting to eat!! I love that it is so easy, too. The hardest part of this recipe was whipping the cream!!! Love It!
