Blueberry Cheesecake Pie

Reviewed: Aug. 13, 2005
I cut the sugar in half and it was still almost too sweet. Truly delicious!

Creme Brulee

Reviewed: Jan. 28, 2007
I made this recipe with ChefPeon's suggestions and received a lot of compliments! Oh, and I added more sugar than the recipe called for in the custard mixture, probably an extra tablespoon or two. Thanks for the great recipe!

Tofu Tacos I

Reviewed: Jan. 30, 2007
Really good! I only had plain extra-firm tofu, so I mixed in one pinch of basil, one pinch of oregano, some soy sauce, a splash of balsamic vinegar, and some spicy rooster sauce to the crumbled tofu before cooking it. I made the tacos with corn tortillas and I thought they were delicious!!

Missy's Candied Walnut Gorgonzola Salad

Reviewed: Feb. 9, 2007
I have made this for guests, I added in more spinach, less cranberries (I find them too sweet alongside the candied walnuts), some red onions sliced as thinly as humanly possible, and pear chunks, and used blue cheese instead of gorgonzola. Oh -- and I used bottled balsamic vinagrette as dressing. So not very similar to the salad here, but based on this idea anyway. The guests ate every bite! Thanks for the great recipe, I love how easy it is to candy walnuts.

Lasagna Spinach Roll-Ups

Reviewed: Jun. 15, 2007
Made this tonight. My vegetarian boyfriend said it was one of the best pasta dishes I've ever made! I used big shells instead of lasagne noodles. I only used 1 box of spinach, and added in 1 cup chopped zucchini, one minced carrot, one minced jalapeno, and some salt and pepper to the mix. Other than that, everything as mentioned and it was delicious, thanks, you made me look good today!

Tasty Lentil Tacos

Reviewed: Nov. 11, 2010
"Outstanding" is what my husband said about these, and I agree! Thanks for a great and healthy recipe. I used corn tortillas instead of taco shells, and added minced cilantro and avocado to the toppings.

Raspberry Almond Coffeecake

So easy to make and it was a huge hit -- my boyfriend raved about it and even went so far as to create a "top 3" dessert list -- this was one of them. Thanks!

Bean Soup With Kale

Reviewed: Aug. 14, 2007
I made this very different because I wanted it to be more vegetably for the summertime. I used only 1 can of beans, didn't blend any, and added in 1 diced carrot and 1 diced red bell pepper, plus spicy pepper. It was really enjoyed in this house, and super healthy too, thanks!

Best Chocolate Chip Cookies

Reviewed: Jan. 11, 2007
The recipe name says it all. They really are good cookies. They did not melt down in the oven as much as other chocolate chip cookies, so I pushed the dough down with a spoon a little to make them flatter like I like. Thanks!

Bruce's Honey Sesame Bread

Reviewed: May 9, 2008
Very delicious, easy. One of the best bread machine breads I have ever made. It did rise too much and then sink way down in the middle, maybe needed a bit more flour?

Apple Crisp II

I used a combo of cinnamon, nutmeg, and allspice for the spices, and just used a sprinkle of water on the apples. Other than that as written, awesome recipe -- best apple crisp I ever made, thanks!

Health Nut Blueberry Muffins

Reviewed: Apr. 28, 2009
So good, much better than another low-fat banana muffin recipe I have used in the past. I will use this recipe from now on. I put in 2 bananas and yogurt instead of buttermilk because that is what I had, still great tasting!

Plum Blueberry Upside Down Cake

Reviewed: Sep. 5, 2009
I made this recipe as stated, I had smaller plums and used about 2 cups sliced worth, no berries. It was very good! Like many others some of the sauce leaked out of the springform, I might try this recipe in a regular cake pan next to try and keep the sauce inside. Easily adaptable to almost any fruit you have on hand and infinitely variable by adding nuts/other flavors (such as lemon). Thanks!

Hearty Vegetable Lasagna

Reviewed: Sep. 19, 2009
Very good recipe! I've made it several times now, both as written (so good!) and lower fat by cutting the mozzarella in 1/2 and using cottage cheese instead of ricotta, I also added tons of extra veggies to the sauce -- it was very good! This is my go-to veggie lasagne recipe from now on, thanks.

Vegetarian Shepherd's Pie II

Reviewed: Jun. 10, 2010
OMG so good! I was looking for a veggie shepherds pie recipe that tasted like my mom's (meat) version, and this is pretty close! I added in 1 can of creamed corn and 1 can whole corn in between the lentils and mashed potatoes to make it "New England Style." I fried up the onion first, then added the broth and lentils and barley, then added the chopped carrot in later. Also added in a bay leaf, some sage, and some thyme. So good, thanks!

Roasted Beet, Peach and Goat Cheese Salad

Reviewed: Aug. 3, 2008
Very delicious, I just used what I had on hand: 3 small beets, 1 large and perfectly ripe peach, walnuts and green onions. For the dressing I used 2 T. oil and 1.5 T. balsamic vinegar, plus salt and pepper. It was very delicious, the sweet beet and sweeter peach with the sour snap of balsmaic vinegaraette ad punch of onion is perfect. With goat cheese it would have been better (I woudl have lightened up on the vinegar in that case), unfortunately I didn't have any on hand. I piled the salad on some fresh greens, and loved every bite. Thanks for the great recipe.
