Vegetarian Tortilla Soup

Really yum! This soup is so good I eat it at 2:00 AM for a snack. Like some reviewers I added some black beans, like 1/2 - 1 cup. Delish!

Southwestern Pasta Salad

A definite keeper. My boyfriend loved it (and he is very picky). So easy to scoop out and bring for lunch at work, and pretty healthy also.

Sauceless Garden Lasagna

This recipe is a great idea and had a good general taste, but it had some severe downfalls. First of all, the vinegar taste was too strong. I love vinegar, so it was OK with me but my boyfriend hated it and now I have to eat all the leftovers. Secondly, I think I didn't put enough of the vegetable mixture on the top because the top layer of lasagne didn't cook all the way through. Next time I will make sure to smother it completely with vegetables.

Quebec Pickled Eggs

African Peanut Soup

An easy winner for us... rich, very satisfying for a vegetarian meal. I think it would impress open-minded guests because even though the combination is unusual it tastes very good. Maybe I would try adding neutral veggies (small pieces of cauliflower) next time for an experiment. Will make again for sure.

Pickled Eggs II

A good recipe with a good level of sourness. Intersting mix of seasonings I wasn't sure I would like at first, turned out very good. It just doesn't have the store-bought picked egg taste I was looking for.

Barbecue Tofu Sandwiches

Angel Hair Pasta with Shrimp and Basil

Very good recipe. I added 2 Tablespoons of tomato paste and wish I hadn't. Made it out of things on hand, instead of wine I added some tequila and although it smelled sorta bad cooking it wasn't bad eating. It needed more zing, maybe some lime? Probably would have been better with wine. Easy and fast, I will make again.

Chinese Cold Pasta Salad

Per some reviewers, I added grated carrots, some thinly sliced cabbage, and a little grated ginger to the mixture. I whirred up the dressing in my little mini food prep food processor and that worked very well. I didn't like my inital batch of dressing, so I tossed it out and tried again, omitting the broth and adding some water instead, substituting some tahini for some of the peanut butter, and adding about a tablespoon of vinegar to the mix. It was better but still needs snap, in my opinion. I added toasted sesame seeds to the top. I thought the recipe needed a lot of salt added.

Greek Pasta Salad I

A definite keeper with a really great taste. I put in a pound of pasta and it was fine. Next time I'll add more veggies, maybe I'll try some roasted eggplant/zucchinni/red bell peppers. Thanks!

Jodi's Marinated Veggies

My boyfriend, a vegetarian, didn't like it. To me, these veggies were only OK. Maybe I ruined it by my modifications? I modified the recipe by adding only 1/4 cup onion, and 1/2 red and 1/2 yellow bell pepper instead of the green pepper. I also added only 1/2 cup of oil and 1/4 cup sugar.

Pasta with Asparagus

Yummy! A little bland as a main meal, but it would make a great side dish. I used veggie broth instead of chicken broth, added 2 cloves garlic per some reviews and a combo of goat cheese and mozzarella instead of parmesean because I was out of parmesan.

Hummus III

I love this recipe and make it often, it really is restaurant-quality hummus, or even better. I make it exactly as the recipe says, but I cut down the salt and sometimes throw in half a jalapeno or some chili powder to make it spicy if we're in the mood. Also, it definitely needs extra water added (probably 1/3 cup at least) to make it blend smooth.

Eggplant Parmesan II

A nice recipe, great taste. I made individual ramekins of eggplant parmesan, it was very fun to serve and eat like that. I found I had to cook the eggplant slices 15 minutes a side for them to be fully cooked through. I also used much less mozzarella and it tasted fine.

Cranberry Hootycreeks

Haven't tried to bake the cookies yet. I made them for gifts and I can say they look really pretty in the jars ready to go. All I could find were 1 liter jars (I live in Canada) and there's a good inch of space left in the jar, so I'm worried the layers might get mixed up before I can give them away. Next time I am in the US I will try and find quart jars for next year.

Aunt Mary's Eggplant Balls

I made these eggplant balls and tried frying them in a fry pan. They tended to fall apart, I will try baking them next time. The taste was good, and we ate every bite. I made them again, and baked them in the oven. They were much better and did not fall apart nearly as much. I served them with pasta and a simple marinara sauce. Next time I will try stirring in 1/4 cup TVP for improved texture. This recipe is definitely a winner!

Pasta With Veggies In a Tahini and Yogurt Sauce

I never had anything quite like this before, I expected it to taste sort of like hummus but it didn't. Per other reviewers, I didn't add any water to the sauce and used the vegetables I had on hand: onion, green pepper, mushroom, carrot, and brussel sprouts (sliced). I added grated parmesan cheese to the top and that really gave this dish the kick it needed. The sauce was very light and a little soury, almost like a hot pasta salad? My vegetarian boyfriend did not like this one at all, but I'm the one reviewing so it gets four stars.
