Best Chicken Pasta Salad

This recipe is in my summer rotation. I grill the chicken earlier in the week when I'm cooking for another meal, so it is quick and easy to throw together at the last minute. The A1 gives the chicken a different taste, not the "same old, same old". I do use less dressing. There are never any leftovers. This is a nice change of pace when you are tired of all your other summer chicken recipes.

Irish Cream Truffle Fudge

This fudge was creamy with an awesome, somewhat strong, Irish Cream flavor. It's amazing how the reviews are so mixed! The layers were not as obvious as I thought they would be, but who cares. It didn't last long enough for anyone to notice. It was a huge hit!

Orange Cream Fudge

Great stuff! This tasted as good as I was hoping it would. The end result however, was grainy and the pieces crumbled, so I will try the suggestions by others. It is good enough to make again, grainy or not!

BAKER'S Chocolate-Peppermint Bark

Don't you hate those reviews that change everything? Well, here's another! I did this with white chocolate in a double boiler. Quick, easy, and a great candy for people who don't like real chocolate. Got rave reviews.

Strawberry Spinach Salad I

I had to try this after seeing all of the great reviews and I was not disapointed. At the suggestion of others I reduced the sugar to 1/4 cup and it was still quite sweet; I think the full amount would have been TOO sweet for my taste. The dressing almost tasted as if it had balsamic vinegar in it. I tossed the dressing in at the last minute, which kept the spinach crisp. Delicious.

Bella's Rosemary Red Potatoes

I used baby red potatoes cut into wedges and had no trouble with them cooking within the time given. However, they were "swimming in butter" to quote another reviewer and the overall appearance and flavor was nothing special.

Balsamic Glazed Carrots

I boiled the carrots briefly, as suggested by others, then sauteed them, following the recipe. Maybe this changed the final result, because the carrots were not "glazed" at all; the carrots absorbed the vinegar and the end result was less than spectacular. Sorry!

Italian Style Pork Chops

I followed the recipe exactly. I put a little extra breading on the top since there was a lot left, which may have been a mistake. After 30 minutes the chops were juicy, but the coating was pretty mushy, with just a little browning. If I make this again I won't put on extra breading.

Basil Chicken over Angel Hair

This was a good, quick dish that needed just a little tweaking. I used 1/3 a box of angel hair and canned diced tomatoes as suggested by others. I drained the tomatoes, but the overall dish was a bit too dry for us, so I will use some of the juice next time. Definitely a "make again" meal.

Sesame Shrimp Stir-Fry

I made this recipe as printed except I used toasted sesame oil amd less rice. It served two healthy appetities with no leftovers. It was very good, had an attractive presentation, and was pretty healthy. I only gave it 4 stars because although it was easy, it was definitely NOT a "quick" recipe. It really took a good 45 minutes of active cooking. While that may not sound like much time to most, after a long day of work it was an eternity! I will make this dish again, but on my day off.

Louisiana Shrimp Creole II

This recipe was easy and fairly fast. I followed the recipe as printed, but thought there was too much liquid and it needed more hot sauce. I will make it again, but with a few changes: more spice (cayenne?), less tomato sauce and chop the vegetables into larger pieces so they don't disappear into the sauce when cooked.

Slow Cooker Cranberry Pork

Excellent! For three people, I used a 1 1/2 pound boneless center cut pork roast (NOT tenderloin, which cooks too fast), and it was fork tender and moist after 7 1/2 hours on low. The thin gravy was delicious, and whole berry cranberry sauce made it look and taste great. This would be a nice dish at Thanksgiving for people who don't like turkey.

Salsa Chicken

Reuben Casserole

Very good, unbelievably easy. I used pumpernickle bread and only 8 ounces of sauerkraut. We don't like casseroles that have a soupy consistency, so this was fine as is. The melted swiss on top was fabulous.

Lemon Pepper Pasta Seafood

This is a great, fast dish. If you like lemon pepper, don't skimp on the seasoning. Toss cut up asparagus into the boiling pasta pot a few minutes before draining. Toss it all together and you'll have a complete meal.

Beef and Biscuit

I tried, then reviewed, this recipe in 2001 and gave it three stars. I recently gave it another try and it came out better! Either the recipe was modified since then, or I was asleep when I first read the instructions. True comfort food. My only suggestion: bottom layer of rolls is not necessary.

Double Crust Bean Pie

Delicious! Be sure to let the pie sit for 10-15 minutes after removing it from the oven. It holds together better and the flavors really come out. The crust was brown and the contents were bubbly after only 45 minutes, so watch closely since ready made pie crusts vary. It's a keeper!

Crispy Herb Baked Chicken

I agree with Lynn; this recipe was fine, but nothing special. Keep the chicken away from any moisture, or the coating turns back into mashed potatoes!
