Slow-Cooker Corned Beef and Cabbage
Yummy! My crock pot is small so I had to make some adjustments. I halved the number of potatoes and used half a bag of baby carrots. I put the potatoes, meat, and carrots in the crock pot with a can of chicken broth (what I had on hand). Omitted the beer. I cooked on high for 9 hours then transferred the meat to a warm oven (just to keep warm but not to cook it anymore). I then added my onion and cabbage and cooked for 2 hours. Perfect! Onions and cabbage were tender but not mushy. Potatoes and carrots were not mushy either and had cooked for a total of 11 hours on high. The two of us ate almost all of the nearly 4 pound corned beef because it was so great!

Mexican Baked Fish
Cod was on sale so I came here to find an easy recipe. Told the boyfriend I was making "Mexican Cod" for dinner and he gave me this look like...ummm okay....DANG! It was yummy! The only thing I did different was I added a packet of Old El Paso Mexican Cooking Sauce in the Roasted Tomato flavor. I just poured it on the bottom of my baking dish the put the fish and other ingredients on top. EASY and yummy! Will make again the next time the fish goes on sale!!

Brazilian Black Bean Stew
I make this all the time, but I make it meatless. Meat is expensive when you are paying off law school :-) I use chicken broth instead of water to give it a bit more flavor. It's cheap, easy, and freezes well!
