About this Cook
As a single parent of three, I first learned how to cook mostly because it was cheaper than buying the so-called "convenience" foods. Now I do cook for the joy of it -- new flavours, textures -- exposing my family to new and exciting things.
My favorite things to cook
I love trying out new recipes for meals but I follow in my grandmother's footsteps in my absolute joy of baking -- pies, cakes, cookies, what have you -- I just adore baking.
My favorite family cooking traditions
My entire family takes turns cooking dinner during the week (even the youngest). We end up with some pretty interesting meals but it sure is wonderful to see how proud the kids are of what they have accomplished.
My cooking triumphs
My favourite trimuph occured at Thanksgiving. At the table were 14 people, 13 of whom were self-professed "pumkin-haters." When I served my fabulous 4-layer pumpkin cake, everyone took a piece "to be polite." There was not a crumb left over as everyone fought over the remaining pieces!
My cooking tragedies
No matter how hard I try, I just cannot make lemon anything from "scratch" -- lemon bars, pies, squares, etc. -- all doomed to failure. I guess it's to keep me humble!

Roast Sticky Chicken-Rotisserie Style
Everyone loves it here, my daughter even requested it for her "birthday supper"! I realized the majority of the spices were the ingredients for cajun spice mix so I used that, instead, and just added thyme to it. Like other reviewers, I also placed an onion in the chicken. Fantastic!

Cowboy Casserole
This is fantastic! We've pre-made it, froze it and then took it camping; or made it from scratch right at the campsite. I've even made it in the slow cooker by making homemade baked beans and adding the other ingredients along with in in the slow cooker. All versions are well-loved and frequently requested by my family of 6 -- especially by the kids!

Golden Yam Brownies
Finally made this recipe after it being in my recipe box for several years. It was wonderful! Without telling my son what was in it, I offered him a piece – he even asked for seconds! Unfortunately, he "found out" the "secret ingredient" and was outraged that his mother would fool him into eating the dreaded sweet potato – all the while chowing down on yet another piece! I did not pre-cook the sweet potato; I just shredded it in the food processer. And, thinking it might be too sweet for my family's tastes, I cut the amount of sugar to only 1/2 cup of brown (eliminating the white sugar completely). I also cooked it in an 8x8 pan and only used 1/2 cup icing sugar for the frosting. It was heavenly!! I will definitely be making this recipe again! Oh, we also call it "Golden Blondies" because a "brownie" usually has chocolate in it.
