Creamy Chicken and Rice Soup

This is a good base recipe, but I agree with many of the other negative reviews. It needs only half the rice and half the roux. I also had to add a ton more chicken granules, lots of extra broth, extra milk, and garlic salt. I do still prefer this base to many of the other options because of its simplicity. It just needs tweaking.

Making Crispy Onion Rings

I had to laugh at the reviews that said these were too crispy. That's like a steak that's too tender. These were awesomely fantastic and everyone here LOVED them. These are the best onion rings I've had, including at restaurants. The trick is to use small batches of panko so that it doesn't get clumpy -- if it gets clumpy, it won't stick. As long as you keep adding new dry panko and fry in small batches, you won't have issues with the breading falling off.

Lemon Soup

Just really yummy. Super quick and easy and so creamy, even without milk. I toasted a combination of orzo and jasmine rice in butter before adding it to the broth. I did have a couple bits of cooked egg white, but I just didn't temper the egg mixture quite enough. Totally my fault. Will definitely make this again. :)

Barbecued Pork Steaks

I wasn't expecting to love this sauce, but I had the ingredients on hand and I figured I'd give it a try. There is something about this honey barbecue on pork steak that is just super yummy. I tried it on chicken and while it was good, it wasn't the same. This is a perfect combination!

Princess Cookies

I don't think anyone in my household has ever agreed so wholeheartedly on a dessert. These cookies are just perfect -- they bake up soft and they STAY soft. I brushed them with a glaze made of powdered sugar, fresh lemon juice, and vanilla. They're still perfectly fresh after being in the fridge for 3 days. I will definitely make these over and over again.

Depression Era Corn Chowder

I served this at my gourmet grilled cheese party and it went over very well. We added a bit of garlic powder. 4 stars just because it's a bit thin for a cream soup and it does need a little extra seasoning. :)

Greek Lemon Chicken Soup

Absolutely delicious. This is exactly what I wanted -- just like the homemade soup served in Greek family restaurants in the Chicago area. I did add a bit of heavy cream at the end because I like a creamier soup. Otherwise, followed the recipe exactly.

Baked Custard

Unfortunately, I have to go with a 3 on this. I can see how people would like this if they enjoy REALLY eggy custard, but this felt more like a breakfast than dessert. I didn't finish my serving.

Fish in Foil

I almost never review poorly because I always choose recipes with lots of great reviews. That means almost everything we make is a winner. Unfortunately, this was not a winner. The fish didn't cook well and the flavors didn't mesh. I just don't think foil is the best way to make this recipe, it doesn't leave a way for the liquid to release, which means the fish basically poaches and all the flavor is left in the liquid.

Marshmallow Fondant

This was my first try with fondant. This recipe was easy and worked perfectly. I refrigerated for 3-4 hours, then let it come back up to room temperature. It rolled well and didn't stick to my Wilton fondant mat as long as I repositioned it after each roll. The kids actually ate their fondant. I thought it was a bit too much to eat it all, but it was easy enough to work around.

Ginger Glazed Mahi Mahi

This was a big hit. It's similar to a salmon marinade we use often, but without the orange juice. It goes well with mahi and would work well with other fish as well.

Garlic-Lemon Double Stuffed Chicken

I had my doubts while putting this together. I am glad I gave it a chance. I used crushed corn flakes and fresh grated Parmesan for the breading. I also cooked the garlic in the butter but left about half of it in the saucepan when I drizzled the chicken -- I felt that was enough (and I love garlic). This is definitely not guilt-free but it's still on the keeper list.

Crazy Cake

I almost never leave reviews, but I had to make an exception in this case. My son is allergic to dairy and eggs and I've spent 7 years looking for a cake recipe that can be served to people who actually know what a real cake should taste like. This recipe is not only easy, but it is honestly just about the best chocolate cake I've had. Moist and fluffy, not too sweet or fudgy... and it holds together like no other dairy-free/egg-free cake I've tried... even the expensive boxed brands made specifically for allergies. This recipe makes twice the amount of a cake mix. I mixed it in a separate bowl (I can't imagine mixing in the baking pan would yield great results) and baked in two round pans for a dual layer cake. I can't wait to try this recipe with other flavors!

Chocolate Chip Pancakes

I wish I could give 4 1/2 stars. While these were not "the best" pancakes I've ever had, they were definitely quite good. Very fluffy and just the right texture to cook perfectly inside without burning the outside. I did add 1 tsp of vanilla and 1 tsp of cinnamon. I think that helped give them a little punch. :)

Sam's Famous Carrot Cake

I made this recipe as cupcakes for my son's birthday party. They were a HUGE hit with my entire family (including my incredibly picky husband -- he asks for this cake often). I did leave out the raisins because we aren't fond of them. I paired it with Cream Cheese Frosting II -- the cake isn't too sweet, so it's perfect with a really sweet topping.

Taco Pie

This was fantastic. It's every bit as tasty as a regular taco, but without the extra mess. The crescent roll gives it a slightly sweet taste, which goes well with the taco sauce topping. I used about 1/4 the recommended amount of chips because I thought it would be a bit overwhelming -- I think I'll add a tiny bit more next time, but not nearly the whole bag. We'll definitely be making this one again. It's inexpensive, easy to make, and easy to clean up!

Husband's Delight

We've been making this excellent recipe for years. I just came across it again and felt I should finally review it! We've served this meal to everyone we know and they all love it. The only change I made is that I don't put any noodles on top -- they tend to dry out a bit when they aren't covered completely. I put them all on the bottom. The cream cheese mixture is SO good because of the onion crunch. Even with 2 or 3 of us, we barely have leftovers!
