Wedding Cake Icing

I had been looking for the perfect "wedding cake" icing, and this is it! I've made 3 practice cakes using this icing and they've gone over well! I used water from the water cooler instead of tap water, and the first mixing only took 5 minutes. The second time I made this icing, I added 2 Tablespoons cocoa powder to half the batch for a chocolate cake, and it was great. My family has requested to not have a "Bought" cake anymore! Thank YOU for this recipe!

Beef and Broccoli

Wow! Who would have thought tomato soup would make an EXCELLENT beef broccoli? Rather than plain tomato, I used Campbell's Tomato Bisque. The recipe did not specify the type vinegar, so I used red wine vinegar, and doubled the amount. I added mushrooms and minced onions. To thicken the sauce, I added 1 T cornstarch mixed with 2 T cold water, and brought it to a boil. 1/4 t crushed red peppers was a bit mild. You could easily use 1 t for a zestier taste. I served it over fried rice. Very good recipe, thanks.

Gyoza Sauce

This was so good. Better than the resturaunt. I halved the recipe. I used regular soy sauce, but 4 cloves of garlic, and 1 teaspoon of ground ginger from the jar. In leiu of the sesame oil and crused red peppers, I used chili paste. It was a great dipping sauce for the pork and shrimp Gyoza, fried won tons, and crab rangoon.

Simple Apple Dumplings

I chopped the apples instead of wedges. I had left over apple chunks, so I put them in with the dumplings. I didn't have oj, so I used cranberry pomegranate juice instead. I cut the sugar in half, and used ground cinnamon instead of apple pie spice. They were very good, the whole family enjoyed them.

Radishes Simmered with Thyme

I had a nearly full pound of radishes that needed to be used. Salad making wasn't using them fast enough and the kids wouldn't eat them anyways. Stumbled on this recipe because a photo on the home page photo contest. They turned out pretty good. Reminded me of turnips. The kids still wouldn't eat them, not even a taste, but I will still make them again when I've got a surplus of radishes. I baked them covered in the oven at 350 for 30 minutes.

Port Huron-Style Coney Sauce

I was out of ground mustard. Instead of a potato masher, I used a whisk to break up the meat in the water and spices. I doubled the recipe and let it cook for several hours. Everyone loved it, they not only used it on the dogs, they used it on the fries too. The recipe sounds weird, not browning the meat first, but it was so tender. This coney sauce was the best I've tasted.

Chick and Ox's Pig Pickin' Sauce

The best for pulled pork. We smoked a Boston butt, and I served Chick and Ox's sauce. Very good on pulled pork sandwiches piled high with slaw and pickles.

Spaetzle I

My 8 yr old and I had a blast making this together. It was pretty good. We also made mini meatballs and tossed the Spaetzle with mushrooms, onions, and meatballs. We made a beefy sour cream sauce for it.

Hot Chili Cheese Dip

The crock pot was full, so I baked this for 30 minutes at 375. Like a dunce, I forgot the black olives. It was still a hit with the crowd.

Will's Spicy New Orleans Catfish Fries

Had to use corn meal, couldn't find corn flour. Added a T of seasoned salt to the mix. These made excellent catfish po'boys on toasted french rolls topped with shredded cabbage, carrots, and spicey tartar sauce.

Succotash

I love love love succotash. This recipe was great, except for the large amount of butter it called for. I left the butter out. I added 1 t of chopped dehydrated onions, some thyme, and fresh ground black pepper.

Zeke's Tortilla Soup

I had a busy day, so I cooked the chicken in the crock pot with chicken broth. When I got home, I shredded the chicken, and went ahead and finished the soup in the crockpot. This soup is sooooo good, it was worth the extra calories to fry the tortilla strips! I served it with shredded cheddar and a dollop of sour cream.

Korean Cucumber Salad
