Spinach Artichoke Hummus with Roasted Red Peppers

Reviewed: Dec. 30, 2011
Made this for Christmas Eve events. It barely got touched. In my area, the ingredients were expensive. It had potential and it was very pretty, but I will not make again.

Slow Cooker Chicken and Dumplings

Reviewed: Sep. 24, 2011
Only 4 stars because it needs some "doctoring". I added marjoram, paprika, salt and pepper. one can cream of celery and cream of chicken. I threw in some carrots, onion, and celery. I used Country Style Grands biscuits (rolled flat and sliced up) Only one can is plenty for a 6qt cooker. I had 4 boneless/skinless chicken breasts. Then it turned out great. My family loved it.

Fresh Frozen Cucumbers

No thank you. I followed the recipe. I just thought they were too sweet. I don't call it a total waste. But it was an extensive wait for uninspiring results. I will search for a better recipe.

Enchilada Meatballs

Reviewed: Aug. 16, 2011
Good recipe. I agree w/ some changes it is better. I decreased the amount of cornbread. I used some Taco seasoning to my meat mixture to kick it up a notch. I did not use tomato sauce. I only used more enchilada sauce. Next time I will put some chopped onions in it. I served over Spanish rice and a side of corn. Good dinner idea.

Ham and Asparagus Strata

Reviewed: Aug. 6, 2011
Good recipe. But it definitely needs more tweaking. This recipe could be adapted many ways. I think I would make a breakfast strata. Make sure you use a shallow dish. I used a deeper one and it had to cook for 1 1/2 hours. definitely not worth it. It was plenty moist. Skip the mustard too. It was not great in it.

Cabbage Rolls II

Reviewed: Jul. 30, 2011
OFF THE HOOK GOOD! I only gave 4 stars because a bit of tweaking. I added garlic powder to the ground beef and onion mix. And I also almost quadrupled the recipe. I used 2 (15 oz. cans of sauce), 4 tbsp. brown sugar, 4 tbsp. lemon juice, 4 tbsp. Worcestershire. This was the exact flavor I remember from when my mother made it when I was a child. But she made it in the oven. I will be keeping this in my recipe box forever :)

Mexician Pie

I was torn between 3 and 4 stars. I followed the recipe to the T. IMHO, way too much sour cream and mayo. It ruins the whole dish. The spices are spot on delicious. Warm sour cream is not good. This recipe is definitely a keeper, but I will put my sour cream on the side.

sorry, nope not a winner. Too salty. I made in the slow cooker. It tasted like a salty Beef Stew. Never again would I make this. I give it credit, the one star, for easy.

Roast Beef Sandwich Roll

Reviewed: Apr. 27, 2011
Really good! Yep, tweaked a bit. Used pizza crust from Pillsbury. I sauteed the onions, peppers, spices, minced garlic in EVOO. Then used triple cheese blend w/ Angus beef from the deli. Brushed w/ egg wash. Baked for 20 min. sit for 7 min. Delish! Definitely a keeper. And I will play with recipe for other ideas. YUM!

It's Chili by George!!

Great recipe. Followed Luv2Cook recipe. But I used one can of Rotel, and once can diced tomatoes. Made it in slowcooker. Cooked for 8 hrs. I wish I used one can of tomato paste to thicken it up a little bit. Browned the beef first w/ 3 cloves garlic and one medium yellow onion. Thanks for the recipe. It is in my recipe box.

Very good recipe! A keeper in my recipe box. Certain ingredients can be substituted to taste. I have made them twice already. My favorite was cranberries and almonds w/ chocolate drizzle on top. I only use 1/2 cup brown sugar. And next time I will try using applesauce instead of oil. Thanks!

Herbed Dumplings

Good Dumplings. Next time I will make them smaller. I did cut back on the salt and seasonings. I used them in my slow cooker. Cover and do NOT peek. Let them cook for the last 45 minutes of dish.

Excellent recipe! I did not add the anise seed. I will find some next time I make this. Definitely a keeper! I drizzled them with semi-sweet chocolate. I made them for holiday gifts. Hard to keep my hands off them. I will save a "few" for me.

Very good! But I agree, too much salt. But I did add some pork sausage in mine. Next time, I will not. And omit the salt all together, IMO. I used 4 cups of chicken broth. I will save this recipe.
