Orzo with Parmesan and Basil

I love this dish! I've tried using orzo in other recipes, but I always come back to this one. Since I never have fresh basil on hand, dried has always suited me just fine. Sometimes I use olive oil to brown the orzo, and it adds a different flavor too. YUMMY!

Cream Cheese Candies

So easy, so addictive! I followed the advice of using 8 oz of cream cheese, 2 lb of confectioner sugar and 1 t of peppermint extract. My kids and I added some gel food coloring to make pink for Valentine's Day and yellow for the Steelers :) Can't wait to share them!!

Chocolate Pretzel Rings

I love to make these! Instead of using chocolate kisses, my hubby and I like using white chocolate wafers and Reese's Pieces. Crispy, salty, creamy, sweet - this has got it all!

Bran Muffins II

I've been enjoying fresh muffins for a few weeks now, and I love it! The first batch I did plain bran with a few raisins and brown sugar sprinkled on top. The second time I added cooked diced apples and more raisins. I really liked that version! This last time I added shredded zucchini and more raisins. I think I used too much zucchini because they were a little mushy inside, but still tasted great. I am thinking of trying blueberries too. So easy and I eat them guilt free since I subbed some whole wheat flour and used applesauce instead of the shortening.

Ham and Cheese Puffs

I love these little bites! I've made them numerous times, and everyone at my church loves them. I've done a few different variations - turkey bacon, ham, and veggie (finely chopped and sauteed bell pepper, red onion, and broccoli). They all go over very well for our coffee hour snack time.

Triple Berry Crisp

The oatmeal crust and topping is fabulous!! I even cut back butter to 1 stick and substituted whole wheat flour for white flour. Can't wait to eat more tomorrow!

Amish Friendship Bread II

The last time I made this I used lemon pudding and added some frozen blueberries. I baked it in a bundt-like pan, and when it was done I drizzled a lemon glaze over it. YUMMY!

Homemade Italian Turkey Sausage

Very tasty sausage! I wanted to use turkey sausage in a breakfast casserole, but didn't have any on hand, so I used this recipe with the ground turkey that I did have. I made a few little patties, but most of it I cooked as crumbles. My kids and I couldn't stop eating it! Can't wait to make it again!

Ricotta Gnocchi

My rating is purely based on the gnocchi, as I did not make the sauce. Instead I made a pesto sauce, and that complimented the parmesan cheese flavor of the gnocchi quite nicely. I look forward to making the gnocchi again when I have ricotta on hand!

Award Winning Soft Chocolate Chip Cookies

AWESOME!! I actually made it with pumpkin spice pudding mix and cinnamon chips (no chocolate chips). I bet it would be great with peanut butter chips too. Can't wait to try it again!

Gobble Up Granola Snacks

Great recipe! I followed some of the other reviewers idea of 2/3 cup of PB, honey, brown sugar, and raisins. Even hubby said "not bad" which is a high compliment for anything containing oats! Kids age 2 and 4 loved them too!

Spiced Slow Cooker Applesauce

I LOVE THIS! I have made it 3x in the last month, and I can't get enough of it. It tastes like apple pie filling, and it is so good! I've used a mixture each time, using Jonagold, Golden Delicious, and Cameo. It made for a great treat straight from the crock pot after playing outside in the snow. YUMMY!

Cabbage Fat-Burning Soup

This soup had delicious flavor, especially considering how good-for-you it is. I used the same ingredients as the original recipe, but my amounts may have been a little different - only 2 onions, a lot of baby carrots cut into chunks, frozen green beans. I used chicken broth instead of beef, but that was the only real difference. I look forward to eating more of this guilt-free soup!

Carrot Oatmeal Muffins

I made this with my 4 year old daughter and we both loved it! No need for the cream cheese filling, but it would be great with a cream cheese frosting! We made ours in mini loaf pans and baked for 30+ minutes. Definitely use 1/4 c oil and the rest applesauce, and next time I might not add the coconut. I can't wait to share with my health conscious sister. Delicious!!
