About this Cook
I am married to a great husband, and a am mommy to my 5 year old son and 7 year old daughter. Our house is busy!! I teach full-time too.
My favorite things to cook
I love to make big pots of soup, casseroles (to have easy reheats for dinner), and baking.
My cooking triumphs
I have proudly made birthday cakes for each of my kids' birthdays. I've done: a monkey cake and banana cupcakes, the boat from the Wonderpets, 2 cakes shaped like ice cream cones, a flower, a "Pinkalicious" princess cake, star cakes, a bulldozer, and a train cake.
My cooking tragedies
In the past year, I've had a few problems learning to bake gluten and dairy free for my husband. We've had some things with unusual textures and flavors:(

Amy's Garlic Egg Chicken
Made this with chicken tenders since that's what I had on hand. Kids (age 4 and 6) loved it and asked when I can make it again. I did make a few subs to the breading, to accommodate my gluten-free/dairy-free hubby - crushed up rice chex and no cheese. Will definitely do this one again!

Brown Rice Breakfast Porridge
Very tasty! My daughter loved it (she's a big oatmeal fan). I used raisins and brown sugar instead of blueberries and honey since that's what I had on hand. A keeper for when we have extra cooked rice on hand.

Garden Fresh Tomato Soup
Very easy and tasty! I used a handheld submersion blender to make it nice and smooth. I opted to add some Italian seasoning for a little more flavor, and I used gluten free flour and dairy free margarine. Now hubby can enjoy it too!
