I have tried a number of carrot cake recipes over the years and while some were quite good, not one can come close to how perfectly marvelous this one was. I have always tried recipes that included pineapple, as it simply doesn't work without it, but the magic ingredient is the coconut. It adds incredible moisture and shouldn't scare you off if you don't like coconut desserts. It blends in well during baking and my family couldn't believe there was any in it. It was my son's college graduation cake, and everyone fought over the leftovers. It was that good! Thanks, Linda for a wonderful "keeper" in my family.

My family loved these, but I did change things a bit. It desperately needed more bread crumbs, so I added about a half cup of fresh bread crumbs and instead of Italian seasoning, I used about 2 teaspoons of Grill Mates seasoning for chicken. I like the cream cheese addition. Good stuff! For a less sticky meatball, simply refrigerate overnight. I baked some leftovers the next day and noticed quite a difference. Will definitely make again.

I will never slave over my old recipe again! This lasagna tops them all. My kids absolutely loved it, even the youngest who says he doesn't like lasagna. I followed the recipe, but I'm always generous with the cheese. Definitely a "keeper". Thanks!

A great hit on Christmas morning. My kids want more! I did not include mushrooms. I will make this ahead so they can warm the leftovers before heading off to school. A nice change from the cold cereal routine. Very easy!

Good soup! After soaking the beans overnight, I poured about a quart of ham stock over it instead of water. I cooked the soup overnight (8hrs.) and the vegetables were not too soft. Needed salt to taste.

I've tried other recipes and this one tops them all. Not too sweet; just right. I used 3 bananas and mashed them. Will definitely make this one again.

Perfect! The best we've ever tasted. A little extra time to make sure the popcorn is turned every 15 mins. but worth it. We'll be making large batches for Christmas gifts this year. Thanks for a great recipe.

What a wonderful Thanksgiving casserole! My mom wanted to take all the leftovers home. I used the Mexican-style cornbread and it was very tasty. We won't wait until next Thanksgiving to make this again. The kids can whip this one up for you. It's that easy.
