great! also added some cheddar cheese chunks. they sink to where they're near the bottom and cook to make a delicious and cheesy crust.

added extra oregano and garlic, someo cumin, flour to thicken a bit and some goatcheese at the end. a great recipe, and especially liked the possibility of different variations.

Roasted Red Pepper Chicken

Very good. I fried and then baked the chicken. I also carefully placed the bread crumbs on the breasts as shaking would have spilled the contents. I definitely recommend adding feta to the sauce and using more than the recipe calls for. Very rich but very good!

Pork Chops Stuffed with Smoked Gouda and Bacon

Apple Cider Pancakes

These turned out terribly for me, but it could be partly due to the fact that I used my normal "from scratch" recipe for the pancake mix part. Perhaps the amount of flour wasn't the same? These tasted good but were chewy and tough...

Family's Creamed Spinach

This dish was somewhat bland. I think part of the problem may have been the spinach - I usually use fresh spinach and prefer the taste, and I'm not sure I properly thawed the frozen stuff. Will probably try again with fresh spinach.

Roasted Vegetables

Used whole baby yukons and winter buttercup squash instead of butternut. I think the extra veggies (it was a big squash) meant I should have added a bit more mixture than I did. The overall flavor was GREAT but a bit mild due to my alterations. Will add more next time. Great side dish to prepare in bulk for large gatherings!

Amazing Simple Thai Tofu

Very, very good with just a few alterations. Added shredded zucchini to "bulk up" the mixture a bit. Also added extra green onion (you could easily double called for amount) as well as a few red pepper flakes. A delicious and quick recipe!
