Acapulco Chicken

YUM! We loved this one! I was out of jalapeno peppers, so I just omitted them. It did not have much heat, and we be really great with them added (or if omitted, add a few more drops of hot pepper sauce). I served it over cooked white rice. I can't wait to have this one again!

Lentil Soup

YUM!! Definately one of my new winter favorites. I added 2 c. water and 1 Tbsp. vinegar once the soup cooled (for leftovers). It freezes really well too!

Ultimate Potato Soup

FANTASTIC!!! This recipe was wonderful. I did add extra broth when boiling my potatoes so I could cook them a little longer. Also, I added a touch of corn starch to make it a little thicker (for personal preference only). It was great before adding the corn starch. I have definately added this one to the family favorites!

Very yummy! I only had butter-flavored shortening on hand, so that's what I used. They were fabulous! I made both milk and dark-chocolate cookies. I will definitely be adding this one to my list of favorite cookies!

Chicken Piccata II

This was really good! It only took a minute to bread the chicken breasts. Once they were in the pan, I had time to fix my sides. This is a perfect recipe for a 30 minute meal! The chicken breasts were very tender and juicy. My husband has already requested them again!

Country Style Fried Potatoes

These were awesome! I had to add additional shortening with each new skillet-fry, as not all potatoes would fit in my skillet. I found that without the addition, the new batch of potatoes will burn. This a new family favorite!

Fantastic!!! The mushrooms were tasted just like butter! I used the Tyson trimmed and ready chicken breasts...they didn't need to be pounded because they were already the correct thickness.

We LOVED this meatloaf!! I don't usually like a sauce on my meatloaf, but this one was perfect (just the right amount of sweetness). We will definately have this one again!

Mongolian Beef I

This was a wonderful recipe. I was origionally worried about the red pepper being too hot, but it was a perfect amount. The recipe says this serves six, but it served more like three or four. I should have doubled the sauce as suggested by other reviewers. I did use lite soy sauce and did not have to add any additional salt (which is unusal for me). I can't wait to make this one again!

Mushroom Beef Skillet

YUM!! The only change I made was to add 1 tsp. of corn starch (with about 1 Tbsp. of water) at the end to thicken the sauce. As stated before, this can also be done by adding a little flour at the end. The flavors were fantastic and the meat was very tender. We will definately have this again soon!

Smothered Mexican Lasagna

This was great! I was worried about it not requiring any shredded cheese, but it wasn't needed;The ricotta gave all the cheesy flavor needed! My husband couldn't even tell it was ground turkey instead of ground beef! We will definately make this one again soon.

YUM!! I didn't have any red pepper, so I just omitted it. I also used 4 oz. of cream cheese to make the sauce thicker. I will definately make this one again!
