Quinoa Vegetable Salad

4 Stars only because, like with grits, I don't like getting the little grains stuck in my teeth. I made minor veg. substitutions and cooked the quinoa in low-sodium chicken broth, and used half the salt. When I tasted the quinoa I almost gagged on the salt so I didn't add any additional when I added in the vegs. That made it just about right. We enjoyed the cilantro and balsamic flavorings and made a very refreshing salad. This was my first go at quinoa. Not so sure I'll do it again but it was a good introduction.

T's Sweet Potato Fries

Seriously delicious and simple. I can't believe I haven't tried this before now...can't wait to try it out on the kids at Easter. I think I'll play around with baking at higher temp or broil to crisp up a bit. Thanks for sharing.

Mom's Pretzels

I made these yesterday for our Super Bowl pregame snacks and they were a hit. I'm convinced pretzel-making is half recipe and half technique. I substituted warm Heinekin's for the water and everyone enjoyed the taste. I so appreciate all the helpful previous reviews about the baking soda bath. I will add that there is no need to rush thru the process. - 45 sec. on each side was good. In fact, I took the time to drain the dough on a rack (towel under) with good results. My biggest problem was "rolling the dough". My arthritic hands simply stretched and squeezed as best I could. Thanks for the recipe...I'll do this again next year if not before.

Roasted Root Vegetables With Apple Juice

4 stars only because it was a lot of work to prep and precook the veggies. We loved the apple juice glaze. It's not overpowering and removed the bitterness from the rutabaga. Served with broiled salmon and fresh pineapple. Wonderful meal on a gloomy winter day. Thanks for sharing the recipe.

German Red Cabbage

I followed this delicious recipe except for three minor deviations: I used kosher salt, I used just 1/8 tsp. or so of ground allspice and I didn't have a sweet onion so i used a regular yellow onion. Served with turkey kielbasa and parsley potatoes. My Polish ex-DMIL said to always use kosher salt when going for the sweet/sour tang. I didn't give it 5 stars because I found it almost too overpowering...I think I'll add an extra apple or so. And, of course, it all depends on the size of the cabbage. Also, my yellow onion wasn't as tender as I would've liked...so I'm going to give them a head start next time. Oh, also, I upped the corn starch to 2 TBSP.

Oatmeal Craisin Cookies

Excellent...baked exactly per recipe. No chocolate, no nuts, no cinnamon...just honest to goodness taste-the-oats-raisins-craisin chewy perfection. Calls to mind the simple perfection of Grandma Ople's apple pie. Made 8 doz. with my small scoop.

Cornucopia

This was an adventure but, yes, I just took my time and followed the directions. I did make a few mistakes but only I know about them. I'm calling it successful. Mine wouldn't have needed to be 18" long so I'll try for something smaller next year.

Ricotta Stuffed Squash

I used large yellow squash instead of zukes and didn't follow the recipe very closely but I did use all the other ingredients so I feel justified in leaving a review. It was not a difficult recipe but it used a lot of dishes so I will try to simplify somehow. Nevertheless, it is a very tasty, pretty and light entre. All you need is a loaf of crusty bread. Thanks for sharing.

Mincemeat Cookies II

As you can see in my picture, I topped each cookie with a pecan half and added a cup of chopped pecans to the dough (because almost everything is better with pecans). I made this recipe for my 83-year-old uncle who was a country butcher (as well as my grandfather). He gave me the family's commercial recipe for authentic mincemeat last year and I wanted him to sample my efforts some of which was frozen. I had a 1# pack of homemade mincemeat in the freezer so that's what I added instead of the 2 c. All in all, I wish I would have added more cinnamon and nutmeg, and maybe salt too as another reviewer suggested because they were a little bland--certainly nowhere near the punch you get from a hot pie after Christmas dinner. I love the texture of the cookies and I'm sure they'll ship well to uncle. Note I made a glaze of confec. sugar and Southern Comfort. I added about 1/4 cup of SoCo to the dough as well.

Lemon Blueberry Bread

This is a TEN-STAR recipe, imho. Other than (1)dredging the blueberries in flour to prevent sinking and (2) omitting the glaze, I followed this exactly as written. Perfect.

Gingerbread Men

I missed the molasses of traditional gingerbread but this is a great, mild kid-friendly version. I made the recipe as written and had no trouble working with the dough as others did. I used my 1/4" rolling pin rings and used confectioners sugar to roll it in as well as parchment paper on the pans. 100% success. Iced with lemon flavoring...delicious! Thanks for sharing.

Peppermint Meringues

Libby's® Pumpkin Roll with Cream Cheese Filling

What took me so long to work up the nerve to try this? It is seriously delicious! I followed the recipe except to add 2 full tsps. of cinnamon per another review. The dental floss garrotte method of slicing works well on this for neat slicing.

Poppy Cheddar Muffins

I made these as something different to serve with All Day Apple Butter at the suggestion of a cook on Recipe Buzz. Oh my! The combination is sublime! I made these as directed and used my cast iron muffin pan--well oiled. Crispy, cheesy, mmmm good! I don't really taste the poppy seeds with the spicy apple butter and sharp cheddar flavors, but I appreciate the interesting color contrast. The batter is thick and the muffins are dense...pass the apple butter please. (If you use your cast iron molds, be sure to let these sit for a minute or two before carefully unmolding.)

Sunday Gumbo

My guests and I loved this but I'm saving the fifth star for a roux-based gumbo. I used Aidels chicken andouille sausage instead of Italian which gave off enough heat to cut back on the cayenne. Otherwise, made as directed. Thanks for sharing this easy recipe.

Holiday Chicken Salad

Too Much Chocolate Cake

Oh, Em, Gee! This is a wonderful recipe. I baked it in my PC flan pans as the base for cream cheese/cherry pie filling. It's going to be out of this world. Because I was rushing, I was a little sloppy in measuring the oil and water and forgot to use warm water...it still is wonderful. It yielded the two flan pans plus a small corning ware dish that we could sample. Cakes for dual birthdays at the office Thursday. I used the Pillsbury Moist Supreme Devils Food which has pudding already in it so I didn't add any more. I baked it for 25 mins. at 350...perfect.

Strawberry Jam

While I've been making freezer jam for years, this was my first attempt at canning. I shared travails with other reviewers. I got spit on (OUCH!), and while I stirred the entire 20 minutes except for the plate in the freezer thing and the spoon in ice water thing, it scorched. I ran over 20 minutes and then all of a sudden it was too thick. And what a sticky mess! This was really just canning practice and that went well, so I'm not upset that my 3 8 oz. jars of jam are probably inedible. This process is just not cost effective...I'll go back to freezer jam. Three stars because a lot of the failings were mine.

Asparagus and Ham Casserole

I enjoyed this as a new alternative to typical leftover ham dishes. I went light on Mrs. Dash's lemon pepper as other reviewers suggested. Also I added the celery and asparagus RAW, baked for 45 mins. with cover, then took lid off and added bread crumbs for the last 15 mins. The celery was just a tad crisp and actually added textural interest. No other changes. I'll make this again. May 26, 2012 I made this again using broccoli instead of asparagus...just as good. Nudging up to 5 stars.
