Easy Lasagna II

I will never boil lasagne noodles again! I made this with a few changes and it turned out wonderful. I used quite a bit more sauce, probably 58oz or so. I like my lasagne saucy. I used ricotta instead of cottage cheese, and a little extra mozarella. About the liquid, it depends on the sauce you use. If it's watery sauce like Ragu brand, you probably don't need extra water. But if it's pretty thick like Prego, you should add some extra water. Thanks for the great recipe; it was wonderful!!

Chicken Tortilla Soup V

Delicious; tastes just like authentic chicken tortilla soup. Definitely use lime instead of lemon. I used a box of Imagine chicken broth, and I didn't have any fresh garlic so had to use garlic salt. Also, I added black beans. We topped with tortilla strips and sour cream. Even my 4 yr old who said "I'm not going to eat that" had two bowls full!

Chicken Milano

This was amazing!! I made this last night. I did substitute white wine (Chardonnay) for the chicken broth as I wanted to get rid of it and used half fresh basil and half dried. Also, I sliced the chicken breasts before frying as I thought this would reduce cooking time. It was wonderful. I think I did reduce the sauce too much and ended up adding some pasta water. Great flavor!

Applesauce

Delicious! I did forget to cook it after running it through the processor. Also, I added sugar to taste and added some cinnamon. It was so good! We ate it plain and with latkes and pork chops.

Chicken Enchilada Casserole II

This was really yummy! The only thing I changed was I bought a rotisserie chicken to shred to save time. This was super easy; made lots; and was so good! Next time I might leave out the chopped onion as I'm not a big fan of onion and the casserole had plenty of flavor. Thanks!

Italian Summer Squash Polenta Bake

MMMmm. I just got finished eating this casserole. It was amazing! I did add about a pound spicy Italian sausage for my meat-loving hubby. Also, I am out of garlic salt so I added 3 cloves fresh garlic to the veggies and cooked it with them. I added extra sauce, though I didn't measure it. I just made sure all the veggies were covered (about 2/3 of a 26 oz jar). I couldn't find flavored polenta so I used plain with lots of salt and pepper and some Italian seasoning. I fried each side for a minute or two. We all loved it, including my two-year-old who kept saying, "I like polenta!"

Hummus III

Yum Yum! This was so good and easy too. I made it for my book club along with some fresh pita. I doubled the garlic and just added lemon to taste. It doesn't have the bitter taste like the ones in the supermarket. Very tasty! I also spent the time to remove the invisible husks around each bean. It made the hummus very smooth. I will keep making this one!

Dark Chocolate Cake I

This is a great recipe! I just wanted to put a review up because I baked this cake at high altitude, about 6000 ft above sea level. I added 4 T water and 2 T flour. I used only 1 3/4 t baking soda, a scant 1/2 t baking powder, and only 2 cups of sugar. Lastly, I used 5 eggs. Everything else I left the same. It turned out fantastic!! It wasn't too dense or anything; rich and sweet and perfect!

Pork Chop and Potato Casserole

This was a very easy and yummy recipe! I added some Italian seasoning to the pork chops before browning and used the roasted garlic mushroom soup. My hubby loved it and it was so easy!

Fast and Easy Pancakes

These are fast and delicious. I was looking for something to whip up real quick. I used only 1/2 cup sugar and they were plenty sweet. Also, I added some a cinnamon plus blend I have, which has mutmeg and clove in it. I got lots of compliments!

Chicken Cordon Bleu II

I was a little worried about how the wine would mesh with the dairy, but this recipe was wonderful. My husband was so impressed. If you sprinkle a little paprika on top, it makes a nice presentation!

Apple Cinnamon Oatmeal Bread

I just finished making this bread and my whole house smells great! It is moist, yet still light. I didn't have apple cinnamon oatmeal so I used plain instant oatmeal. I added some extra cinnamon and brown sugar to compensate. I also added a chopped up apple as advised. I did make a topping with plain oats, brown sugar and butter. Excellent!

Holy Smoked Bacon and Mushroom Penne

Yummy! I thought the finished product tasted like something from Olive Garden. It was very easy and inexpensive since I already had most of the ingredients. I only changed a couple of things. I used 1/3 pkg of bacon and drained about half the grease. It still had plenty of flavor. There was a lot of liquid so I turned up the heat really high to boil it off quickly, and I added some cornstarch dissolved in cold water at the end as I didn't want to wait. Next time I will add the cornstarch earlier and make a saucier meal. This would be great with chicken breasts in it too!

Mexican Style Shredded Pork

This recipe was very good! I used a slightly larger pork loin roast (about 4 pounds). Also, I wasn't sure what chipotle sauce was so I bought a can of chipotle peppers and put in about half of it, including one pepper I chopped up. Looking back, I think they are talking about hot sauce. Also, I did not try the rice. It made a lot of meat. I used 3/4 cup water in the crockpot and it made too much liquid. Next time I will use less water. Mine turned out a little bland, but the flavor was better one day later. Overall, will make again.

Rosemary Chicken with Orange-Maple Glaze

I didn't have fresh rosemary so I used dried. I liked the way the rosemary flavored the chicken, but the chicken was pretty dry. Also, even after adding cornstarch, the sauce was very thin. If you make it, don't cover the dish while cooking as it adds moisture. The sauce was ok. Not a keeper.
