Cappuccino Chip Bread

Reviewed: Oct. 19, 2011
This bread was a hit at home and at work. I'm not a big fan of chocolate, so I used carob chips instead. I read previous posts about not tasting the chocolate enough, so I doubled that. Also, to give it a stronger coffee flavor, I used coffee instead of water.

Cinnamon Almond Butter

Reviewed: Oct. 10, 2011
Someone gave me a bunch of almonds and I was trying to find something to do with them. Overall I liked this recipe. I used honey instead of white sugar and added olive oil (as suggested in a previous review). It wasn't quite creamy enough for me, but the flavor is great. I will make this again. Maybe next time I will take out the cinnamon and add a little cocoa powder too it to make it a bit like Nutella.

No Tomato Pasta Sauce

Reviewed: Sep. 5, 2011
I can't eat red tomatoes and have been looking for alternatives to Alfredo and pesto sauce for quite a while. I really liked this recipe. It mimicked "red" sauce so well, I had to train my brain that it was ok to eat :) it came out a little too thick, but I think that was because I used fresh carrots instead of canned. My husband (the anti-vegetarian) and my picky teen even tried it and liked it.

Garlic Yeast Bread

Reviewed: Sep. 5, 2011
My family loved this, but I made some changes. The recipe makes too small of a loaf. It disappears too fast in my house. I tried doubling it and it went over the edge of the bread machine pan...but it still tasted great. I think changing it to 24 servings will work best for my bread machine. I used Italian seasoning instead of the individual herbs because it is easier for me and I always have Italian seasoning on hand, but not the individual herbs. Also, per the request of my hubby, I added Parmesan cheese to the second loaf. Very yummy!

Quick and Almost-Professional Buttercream Icing

Reviewed: Sep. 3, 2011
I have never used butter instead of shortening in frosting before. I made it in a pinch and it turned out better than expected. Frosting stiffens up in the fridge, so if you make it ahead of time or refrigerate your cake, leave it out for a while before using/serving.

Too bland. Had to season to be edible. Won't make again.

Slow-Cooked Corn Chowder

Reviewed: Jan. 21, 2010
This became an instant family favorite. I did modify a bit based on what my family will eat and what I had on hand. I used bacon instead of ham, canned corn instead of frozen, and onion powder instead of a chopped onion (my husband doesn't like onion chunks in food).

My family really liked this one. It is a keeper. I have a few mushroom haters, so I use cream of chicken.

Da Beef Lover's Half Time Stuffed Meatloaf

Reviewed: Aug. 25, 2005
My husband is a picky eater, so I had to take out the spinach, mushrooms, and peppers. He isn't a big fan of meatloaf, but he loved this one.

Baked Garlic Parmesan Chicken

Reviewed: Aug. 1, 2005
This recipe was quick and tasty. It was a hit at my house. I even got followed at work when I brought the leftovers for lunch. Had to use more olive oil and garlic to coat. Needs some kind of sauce.
