Fiery Fish Tacos with Crunchy Corn Salsa

Yummy!!! I made some changes - marinated the fish in zesty lime salad dressing mixed with olive oil (Kraft?), mixed non-fat greek yogurt with jalepeno's, cilantro, and chile powder in the blender for some kick. We ate them the first night and I felt like it was missing something. The second night I added some fresh mango to the salsa - out of this world!!! I made extra salsa and I'm going to cut up more mango and throw on top of lettuce with some of the yogurt sauce to take for lunch tomorrow. Hubbie skipped the mango and added cheese to his.

Baked Coconut Shrimp

Yummy - followed recipe except for using two whole eggs instead of whites. Next time I would just shake all the shrimp in a plastic bag with the cornstarch mixture to save a step. Also - heavily PAM your baking sheet, I'm going to try baking on top of a cooling rack next time to get it extra crunchy.

Italian Sausage Tortellini Soup

Really good - I added baby bella mushrooms, corn, and baby spinach. I used half pound of hot italian sausage which gave it some kick. If you don't like spice, stick with the sweet italian sausage.

Cha Cha's White Chicken Chili

If you are like me, and prefer to save as much time as possible, cook this in your slow cooker. I added all ingredients except cheese (used 3 large uncooked chicken breast) and cooked 8 hours on low - it came out fantastic. I did use some other user's tips: I cooked with 2 cans white beans, 1 can black beans, 1 can of corn, omitted the can of jalepenos and added a fork full of sliced jalepenos. You can't mess this up in the slow cooker, it came out nice and thick. I served with a dollop of sour cream and my husband added cheese and ate with tortilla chips. So simple and came out great! Thanks for the great recipe!
