Tortellini Pesto Salad

This was a huge hit at a family gathering. I used tri-colored spirals instead of tortellini, jarred red bell pepper instead of fresh, and omitted the carrots and spinach. I also chopped the green olives so they were spread around nicely in the pasta and not overpowering. I omitted all the dairy except for what was in the pesto, and used balsamic vinegar instead of white so it wasn't too tart. This version wasn't too heavy but still had a unique flavor that had everyone asking for the recipe.

Baklava

I tried the vegan version of this recipe, and it turned out perfectly, especially the syrup. I used 8 oz of walnuts and 4 oz of almonds and substituted Smart Balance for butter and agave syrup for honey. I only used 1/2 cup water to 1 cup agave (it might have been too much agave, since it's sweeter than honey). I also added a dash of nutmeg and clove, and 2 tsp of vanilla rather than 1. It was a huge hit at a family get-together and now they are requesting it for Christmas!

Ginny's Cheezy Macaroni

Wow, this started as a "what's in the cupboard" meal, and I'm already planning which parties I'll be making this for. I used butter instead of margarine and about 6-7- oz of Cheddar. I covered it with foil for 30 minutes, then removed the foil, sprinkled breadcrumbs on top, then baked it uncovered for another 30. It turned out nice and browned with a great crispy top. It wasn't super greasy like some other mac 'n' cheese recipes I've tried. Also added a couple dashes of nutmeg and garlic powder. Paired with a chianti and green beans, it made a great meal with lots of leftovers.

Pesto Scrambled Eggs

I was pleased at how quick and easy this vegetarian dinner idea was to make. I replaced the cheddar with feta and added capers and Italian seasoning. Then I served it in folded flatbread naan topped with lettuce, avocado slices and parmesan cheese. Flavorful and hearty!

Shrimp and Broccoli

Very easy to make. I used tofu instead of shrimp, stir-fried it with the broccoli. I forgot the rice, but it made plenty for two people without it, like a creamy tofu soup with broccoli. The tofu soaked up the lemon and mushroom flavor very nicely (had to use Cream of Mushroom), and I would definitely make it again - it only took 10 minutes!

Bean Soup With Kale

This was so good even my veggie-avoiding husband raved about it. I didn't have onion, but I used fresh Italian parsley for the seasoning and substituted black beans and garbanzo beans instead of white beans. I mashed the garbanzos with a potato masher to keep the consistency a little chunky, and simmered for 45+ minutes on very low heat. It turned out fantastic.

Greek Grilled Cheese

Excellent! I never thought of putting feta in a grilled cheese, but now I don't think I can leave it out. The red onion was really good too. My husband just adored it. I like the idea of jazzing up a cheese sandwich, and I'll have to play around with different ingredients now. Thanks!

Potato Tacos

Very good. The potato mixture was mild and creamy, an unusual but satisfying texture to bite into. The tacos picked up the flavor of any sauce well, so we tried a variety of dips, including different hot sauces, dressings, and salsas. A great vegetarian alternative to Mexican food.

Broccolini with Seasoned Butter

A total success, and prepared in the nick of time! So simple and yet even my husband who hates veggies raved on and on, and ate every bit too. I actually snapped the tops off a broccoli bunch for this. I put it uncovered in the microwave with a little water on the bottom for 3 mins. I also added garlic powder and Italian seasoning to the butter. It was tender and just right, very fresh tasting!

Grilled Salmon with Avocado Dip

Just the idea of avocado with salmon is great. We use our usual guacamole recipe with this and it turns out great! Both my parents and my in-laws loved it.
