Chicken Enchiladas V

I made these last night and they were great. I did not have a can of green chilles, but I did have pickled jalapeno pepeppers and substituted them. I'm looking forward to sharing this with friends. Best chicken enchiladas I've ever had.

Barbecued Beef Brisket

Based on other reviews, I added 1 cup of diet ginger ale so that the meat would not dry out. Also, my brisket was 3 1/2 lbs. so I cooked it on a low setting for 10 1/2 hours. What a delicious result. Just the right amount of seasoning and moist and juicy pull apart meat. YUM! I will definitely make this again.

Peanut Butter Fudge Cake

I've made this twice and everyone loves it and asks for the recipe. The second time I made it, I used a full 18 oz. jar of peanut butter and put the peanut butter in the microwave for about 1 min. Then I poured the peanut butter over the warm cake. Then I refrigerated the cake for about a half hour before putting the chocolate fudge icing on the cake; which allowed the peanut butter to harden and made frosting the cake much easier.

Southwestern Chicken and Rice Casserole

I cut up the chicken and mixed it in with the other ingredients. Cooked it 15 minutes longer, but the rice was still crunchy. I think it could use more salsa too. Next time, I will pre-cook the rice and add more salsa. Overall, a very satisfying dish.
